Marble cake

An attractive tea-time cake.

Cooking Time : 20 mins.
Preparation Time : 20 mins.

Serves 8.

Ingredients
2 eggs
170 grams plain flour (maida)
1 1/2 level teaspoons baking powder
115 grams margarine or butter
115 grams powdered sugar
1/2 teacup milk (approx.)
1 teaspoon vanilla essence
1 tablespoon cocoa
chocolate butter cream
grated chocolate and glace cherries for decoration
Method
1. Sieve the flour and baking powder together.
2. Cream the margarine and sugar very well until light and creamy.
3. Add the eggs, one at a time, beating each time thoroughly. If the mixture curdles while adding the eggs, add a little flour before adding the next egg.
4. Fold in the flour and add milk until the mixture forms a dropping consistency.
5. Add the vanilla essence and mix well.
6. Divide the mixture into 2 parts.
7. In one part, add the cocoa and mix well.
8. Grease and dust a 175 mm. (7″) diameter ring mould tin.
9. Put 1 tablespoon of each mixture alternately in the tin.
10. Make another layer over the first but this time put the cocoa mixture on the white mixture and vice versa.
11. Bake in a hot oven at 400°F for 15 to 20 minutes.
12. Cool the cake.
13. Cover with chocolate butter icing.
14. Decorate with grated chocolate and cherries and serve.
