Strawberry cream puffs

Strawberries and cream with a difference. Try variations by filling the puffs with ice – cream and fruit combinations.

Preparation time : 15 mins.
Cooking time : 30 mins.

Serves 10 to 12

Ingredients

3 to 4 teacups fresh strawberries

1 recipe choux pastry

200 grams fresh cream (approx.)
3 tablespoons icing sugar

chocolate glace icing

Method
1. Grease a flat baking tin.
2. Place blobs of 1 tablespon of the choux.pastry mixture on the tin at small intervals.
3. Bake in s hot oven at 450°F for at least 20 minutes. Do not open door before this time. Therefore, check to be sure that the puffs are cooked and golden brown. If not, bake further until done.
4. Slit open the puffs with scissors.
5. Beat the cream until stiff. Add the icing sugar and beat a little.
6. Put the cream in a piping bag fitted with a star nozzle.
7. Pipe the cream into each puff, put a few strawberries over the cream, put extra cream if desired and close the puff.
8. Cover the tops with chocolate glace icing.

CHOUX PASTRY

Preparation time : 15 mins.
Cooking time : 15 mins.

Ingredients
55 grams margarine or butter
150 ml water
85 grams plain flour (maida)
2 large eggs
1/2 teaspoon vanilla essence
a pinch salt
Method
1. Sieve the flour.
2. Put the matgarine, water, salt and vanilla essence in a vassel and cook until the butter melts
3. Now add the flour, remove from the heat and beat with a wooden spoon until the mixutre forms into a smooth ball leaves the sides of the vessel.
4. Cool the mixture.
5. Beat in the eggs, one at a time, beating each time vigorously with a wooden spoon.
Tips
This pastry can be used for chocolate eclairs, cheese pakodas, strawberry cream puffs, profiteroles or cream buns etc.
