Coconut cream and orange juice make this an unusual rice. You can eat it by itself or with coconut curry.

||Squeeze out milk from the grated coconut without adding water.
||Mix the rice, coconut milk, orange juice and coriander.
||Heat the butter in a vessel and fry the cumin seeds, bay leaves, green chillies and ginger for a few seconds. Add the rice, orange segments and salt. Mix well.
||Serve hot with or without curry.
