Caribbean rice

Coconut cream and orange juice make this an unusual rice. You can eat it by itself or with coconut curry.

Cooking Time : 12 min.
Preparation Time : 15 min.

Serves 6.

Ingredients
4 teacups cooked rice
1 teacup grated coconut
1/3 teacup orange juice
1 teacup orange segments
1/4 teacup chopped coriander
1 teaspoon cumin seeds
a few bay leaves
4 green chillies
12 mm. piece ginger, finely chopped
3 tablespoons butter
salt to taste
Method
1. Squeeze out milk from the grated coconut without adding water.
2. Mix the rice, coconut milk, orange juice and coriander.
3. Heat the butter in a vessel and fry the cumin seeds, bay leaves, green chillies and ginger for a few seconds. Add the rice, orange segments and salt. Mix well.
4. Serve hot with or without curry.
