Goan chorizo butty
Timings :
Preparation time: less than 30 mins
Cooking time: less than 10 mins
Ingredients :
- 1 tbsp vegetable oil
- 1 medium onion, chopped
- pinch salt
- 1 Goan chorizo, sliced into 2cm/¾in pieces
- 4 thick slices bread
- large handful rocket leaves
Method :
1. Heat the oil in a small non-stick pan over a medium heat. Add the onion and a pinch of salt and cook for 3-4 minutes, or until golden-brown.
2. Add the chorizo slices and stir fry for 3-4 minutes, or until golden-brown and cooked through, adding a splash of water halfway through cooking.
3. Place two slices of bread onto a serving plate. Cover the bread with the rocket, then spoon over the cooked chorizo and onions. Place the remaining bread slices on top.
