Golden broth recipe

Golden in colour, equally rich in taste.

Cooking Time : 20 min.
Preparation Time : 15 min.

Serves 6 to 8.

For the topping
1 chopped onion
1 teacup chopped spinach
1 teacup milk
1 tablespoon butter
salt and pepper to taste
fresh cream (optional)
For the stock
2 large carrots
2 onions
1 potato
For the stock
1. Mix all the ingredients, add 6 teacups of water and cook in pressure cooker.
2. When cooked, blend in a liquidiser and strain.
For the topping
1. Heat the butter and fry the onion for 1 minute.
2. Add the spinach and fry again for a little while.
3. Add the stock and boil for a few minutes.
4. Warm the milk and add to the soup. Add salt and pepper.
5. Serve hot topped with cream.
