Cabbage pulao

This is an easy to make rice delicacy, put together especially for South Indian food fans. This recipe makes use of cabbage and a tempering of urad dal, both ingredients being most popular in South Indian cooking.

Cooking Time : 10 mins.
Preparation Time : 10 mins.

Serves 2.

1 cup boiled rice
1 cup cabbage, shredded
½ teaspoon mustard seeds (rai)
½ teaspoon urad dal (split black lentils)
a pinch asafoetida (hing)
4 to 5 curry leaves
3 dry red chillies, broken into 25 mm. (1″) pieces
¼ cup onions, thinly sliced
a pinch turmeric powder (haldi)
½ teaspoon lemon juice
¼ cup chana dal (split Bengal gram), parboiled
1 teaspoon oil
salt to taste
For the garnish
1 tablespoon chopped coriander
1. Heat the oil in a non-stick pan, add the mustard seeds and allow them to crackle.
2. Add the urad dal, asafoetida, curry leaves and dry red chillies and cook for 1 minute till the urad dal turns pink.
3. Add the onions and turmeric powder and cook for another minute.
4. Add the cabbage, chana dal, salt and 1 tablespoon water and cook over a low flame for 5 minutes or till the cabbage is tender.
5. Add the rice and lemon juice, mix well and cook covered for a few minutes.
6. Serve hot garnished with the chopped coriander.
