Kewra phirni

Healthier version of a North Indian delicacy, I have used low fat milk instead of full fat milk and cream, and sugar substitute instead of sugar to take off the extra calories.

Cooking Time : 20 mins.
Preparation Time : 40 mins.

Serves 4.

4 cups low fat milk
4 tbsp long grained rice
4 tsp sugar substitute
¼ cup low fat cream
5 to 6 drops kewra essence
For the garnish
1 tsp finely chopped pistachios
1. Soak the rice in water for about 1 hour.
2. Drain all the water and coarsely grind the rice in a mixer.
3. Add ½ cup of cold milk to the rice to make a smooth paste.
4. Boil the remaining milk in a non-stick pan and gently stir in the rice paste.
5. Cook for about 15 minutes on a slow flame, stirring continuously so the rice is done.
6. Add the sugar substitute and cream and simmer for a few minutes.
7. Remove from the flame and keep aside to cool.
8. When cool, add the kewra essence and mix well.
9. Refrigerate for at least 1 hour and serve chilled garnished with pistachios.
