Vagharelo bhaat

A Gujarati version of vegetable pulao.

Cooking Time : 25 min.
Preparation Time : 15 min.

Serves 4.

1 1/2 cups Basmati rice
1 1/2 cups potatoes, diced
1 cup green peas
1 cup carrots, diced
2 cloves
1 stick cinnamon
1/2 teaspoon cumin seeds (jeera)
1/4 teaspoon asafoetida (hing)
1/2 teaspoon turmeric powder (haldi)
1 teaspoon chilli powder
1/2 teaspoon garam masala
3 tablespoons ghee
salt to taste
1. Wash and drain the rice. Keep aside.
2. Heat the ghee, add the cloves, cinnamon, cumin seeds and fry for 30 seconds.
3. Add the asafoetida, vegetables and salt and stir for 3 to 4 minutes.
4. Add the turmeric powder, chilli powder, garam masala and rice and stir again for 5 minutes till it is evenly mixed.
5. Add 3 cups of hot water, cover and simmer till the rice is cooked.
6. Serve hot with kadhi and papad.
You can pressure cook the rice after step 5 if you are in a hurry.
