Grilled curry rice

An aromatic rice preparation steamed in a banana leaf. This is a perfect meal to go with all the great starters that you make on your barbeque.

Cooking Time : 15 mins.
Preparation Time : 15 mins.

Serves 4.

3 cups cooked rice
½ cup coconut milk
2 to 3 teaspoons red curry paste
½ cup mixed boiled vegetables
½ teaspoon lemon rind, grated
1 tablespoon basil leaves, finely chopped
1 large banana leaf
salt to taste
1. Mix the coconut milk and red curry paste in a bowl.
2. Add the mixed vegetables and mix well. Add the lemon rind, basil leaves
3. Add the rice, stirring until thoroughly mixed.
4. Spoon this flavoured rice onto the centre of a banana leaf (kitchen foil can be used as substitute).
5. Fold the leaf into a square packets and tie using a string. Grill on a charcoal grill or an electric barbeque turning over from time to time until steam comes out.
6. Serve hot.
This recipe makes good use of left-over rice.
