Creole banana salad

A rich salad with a tropical flavour.

Cooking Time : Nil.
Preparation Time : 20 min.

Serves 6 to 8.

2 large ripe firm bananas
2 apples, finely chopped
100 grams (4 oz.) seedless grapes (optional)
1 small can (450 grams) pineapple tidbits
1 tablespoon lemon juice
2 teacups cooked rice (each grain should be separate)
2 tablespoons finely chopped walnuts
2 tablespoons grated fresh coconut
1 head lettuce
salt to taste
To be mixed into a dressing
1/2 teacup mayonnaise
1/2 teaspoon Tabasco sauce (optional)
2 tablespoons fresh cream
1. Slice the bananas. Chop the pineapples and keep aside the syrup.
2. Mix the fruits, add the lemon juice and a little pineapple syrup. Chill.
3. When chilled, drain.
4. Add the rice, dressing, walnuts and salt. Mix well.
5. Pile the salad on a bed of lettuce leaves and sprinkle grated coconut on top.
6. Serve cold.
