Cucumber and pomegranate raita

Timing :

Preparation time: less than 30 mins

Cooking time: no cooking required

Ingredients :

  • 150g/5½oz Greek-style yoghurt
  • ½ cucumber, grated, excess water drained away
  • 125g/4½oz pomegranate seeds
  • 1 tsp sugar
  • salt, to taste
  • ½ tsp mustard seeds (optional)
  • handful chopped fresh coriander, leaves only

Method :

1. Mix all of the raita ingredients together in a large bowl until well combined.

2. Chill the raita in the fridge until ready to serve.
