Kashmiri spicy potatoes

Timings :

Preparation time: less than 30 mins

Cooking time: 10 to 30 mins

Ingredients:

  • 3-4 medium potatoes, preferably a red variety, washed
  • 1-2 tbsp butter
  • salt and freshly ground black pepper
  • ¼ tsp red chilli powder

Method :

1. Prick the potatoes several times with a fork. Microwave on a high heat for approx 12-15 minutes, or until tender. Cut the cooked potatoes in half.

2. Heat the butter in a frying pan over a medium heat until it is foaming. Season the butter, to taste, with salt and black pepper, then add the red chilli powder and stir well.

3. Add the potato halves and turn to coat them all over in the spiced butter. Fry for 2-3 minutes, then serve immediately.
