Blackberry lassi

Timings :

Preparation time: less than 30 mins

Cooking time: no cooking required

Ingredients :

  • For the lassi
  • 300g/10½oz blackberries, washed
  • 200g/7oz natural yoghurt
  • 140ml/4½fl oz water
  • 2 tbsp sugar or honey (or more, to taste)
  • ½ tsp lemon juice
  • To serve
  • 6 ice cubes
  • 2 mint leaves

Method :

1. In a food processor, blend all of the lassi ingredients to a purée. Add more sugar or honey, as necessary.

2. Sieve the mixture to remove the seeds and reserve the liquid.

3. To serve, place three ice cubes into each of two serving glasses, pour over the lassi and garnish with a mint leaf.
