Kashmiri chai

You’ll never want to return to shop-bought chai tea bags again once you’ve tried this version of Kashmiri chai tea, made with rose syrup, star anise, cinnamon and cardamom. Serves ten.

Timings :

Preparation time: less than 30 mins

Cooking time: 30 mins to 1 hour

Ingredients :

  • 10 tsp Kashmiri tea leaves
  • 5 cardadmom pods, seeds only
  • 3 star anise
  • ½ cinnamon stick
  • 2.5 litres/4 pints 7fl oz water
  • 2 litres/3½ pints milk
  • 5 tbsp sugar
  • 2 tbsp rose syrup (available from Asian supermarkets), or rosewater

Method :

1. Place the Kashmir tea leaves, cardamom seeds, star anise and cinnamon stick into a large saucepan. Add 2.25 litres/3 pints 15fl oz of the water and bring to the boil. Boil for 25-30 minutes, or until the volume of liquid has reduced by a third.

2. Remove the mixture from the heat and add 250ml/9fl oz of cold water.

3. Add the milk and the sugar and bring to the boil. Reduce the heat and simmer for a further 4-5 minutes.

4. Add the rose syrup and stir well to combine.

5. Strain the mixture through a fine sieve, reserving the liquid. Serve immediately.
