Mexican chilli corn pizza

A Mexican style pizza.

Cooking Time : 10 min.
Preparation Time : 30 min.

Makes 6 pizzas.

For the pizza base
500 grams plain flour
20 grams fresh yeast, crumbled
1 teaspoon sugar
2 teaspoons oil
salt to taste
For the filling
1 teacup red kidney beans (rajma)
1 onion, chopped
2 tablespoons tomato ketchup
2 tablespoons butter
2 tablespoons oil or ghee
salt to taste
For the topping
3 tomatoes, chopped
2 teacups cooked corn
1 capsicum, chopped
4 spring onions, chopped
hot sauce
For serving
coarse chilli powder
18 tablespoons grated cooking cheese
For the pizza base
1. Sieve the flour with the sugar and salt.
2. Add the oil and mix well.
3. Make a well in the centre. Put the yeast in this well.
4. Sprinkle 1/2 teacup of warm water over the yeast. Wait for 5 minutes and then make a dough by adding warm water.
5. Knead the dough for a few minutes and keep it under a wet cloth for 25 minutes or until double in size.
6. Roll out 6 rounds of about 100 mm. diameter with the help of a little plain flour. Prick lightly with a fork.
7. Bake in a very well greased baking tray in a hot oven at 200 degree C (400 degree F) for 10 minutes.
For the filling
1. Soak the beans overnight.
2. Next day, cook in a pressure cooker. Drain.
3. Heat the oil and fry the onion for 1 minute.
4. Add the beans, tomato ketchup, butter and salt and cook for 5 minutes.
5. When cooked, mash the beans slightly.
How to proceed
1. Arrange the pizza bases on a plate and spread the bean filling on top.
2. Spread a little hot sauce over the filling.
3. Arrange some tomatoes, corn, capsicum in circles on top of the pizzas. Place the chopped spring onions in the centre.
4. Sprinkle a little chilli powder and 3 tablespoons of cheese on each pizza.
5. Bake in a hot oven at 200 degree C (400 degree F) for 5 minutes or until the cheese melts.
6. Serve hot with guacamole.
You can also make the pizza base using whole meal flour (gehun ka atta) instead of plain flour.
