Energy salad

This salad is a good source of iron, vitamin C, potassium and fructose which is the source of instant energy. It will perk you up almost instantly.
It makes a great snack that can be assembled quickly at any time using all your favourite fruits.

Preparation Time : 10 mins.
Cooking Time : 10 mins.

Serves 4.

1 1/2 cups cauliflower florets
4 dates (khajur), chopped
1 banana, sliced
1 orange , segmented
2 unpeeled red apples, cut into cubes
juice of 1/2 lemon
1/2 teaspoon grated lemon rind
1/2 tablespoon oil
1/2 tablespoon vinegar
salt and pepper to taste
For the orange dressing
1/3 cup thick fresh curds (yoghurt)
4 teaspoons orange juice
1/2 teaspoon mustard powder
1/2 teaspoon powdered sugar
a pinch salt
1. For the orange dressing, whisk all the ingredients together and chill.
2. Steam the cauliflower florets for 5 minutes. Cool.
3. Combine the oil, vinegar, salt and pepper. Marinate the cauliflower in this mixture for at least 1 hour.
4. Combine all the other ingredients in the bowl and chill. Serve chilled with orange dressing.
