Cheesy corn and vegetable cutlet

These vegetable laden, colourful and mouth watering cutlets are great to tempt the tummy of children with a less predictable palate or a smaller appetite. For more baby friendly appeal, roll the cutlets in fancy shapes and sizes. Serve them as a snack with your child’s favourite sauce or sweet chutney, or make a burger or frankie filling with it.

Preparation Time : 15 mins.
Cooking Time : 25 mins.

Makes 6 cutlets.

1/4 cup potato, boiled and mashed
1/4 cup grated corn
1/4 cup carrots, grated
1/4 cup cabbage, grated
1 clove garlic, grated
2 tablespoons cheese, grated
1 teaspoon butter
salt to taste
Other ingredients
2 tablespoons oil for cooking
1. Heat the butter, add the corn, carrots, cabbage and garlic and sauté for 4 to 5 minutes. Remove from the flame.
2. Combine the potato, cheese, cooked vegetable mixture and salt and mix well.
3. Divide this mixture into 6 equal portions and shape into small cutlets.
4. Shallow fry on a non-stick pan using a little oil.
