Low fat curds

Curds are nutritious addition to the diet. They are easier to digest then milk. Curds complement the protein, when accompanied by dishes like parathas, biryanis etc. Use this low fat version of curds as an accompaniment to a main meal or in raitas, salad dressings etc. to enjoy all the goodness of curds without the fat.

Preparation Time : 5 mins.
Setting Time : 4 hours.

Makes 5 cups.

1 tablespoon curds (made the previous day)

1 litre low fat milk

1. Warm the milk, till it is just about lukewarm.
2. Add the curds, mix well and cover.
3. Keep aside until the curds set (approx. 5 to 6 hours). During the cold climate, place inside a casserole or closed oven to set.
Curd set quickly in a warm and dark place.
