Carrot and celery sandwich

A magic formula for better vision due to the use of 4 multi-nutrient ingredients like tomato, cheese, celery and lettuce. These are perfect to tempt anyone at snack time and make a great packed lunch as well.

Cooking Time : Nil.
Preparation Time : 5 mins.

Makes 4 sandwiches.

8 whole wheat bread slices
1 large tomato, thinly sliced
4 lettuce leaves
salt and freshly ground pepper to taste
To be mixed into a filling mixture
¾ cup carrots, grated
2 tablespoons finely chopped celery
1 clove garlic, grated
¼ cup eggless mayonnaise
½ cup cheese spread
½ teaspoon freshly ground pepper
1. Apply a generous layer of the filling mixture on 4 bread slices.
2. Place a large lettuce leaf on top and then the sliced tomatoes.
3. Sprinkle salt and freshly ground pepper.
4. Sandwich each one with the remaining 4 slices of bread.
5. Cut each sandwich diagonally into 2 and serve immediately.
