Bean sprouts salad

Calcium laden fresh bean sprouts in a spicy dressing.

Cooking Time : 5 mins.
Preparation Time : 10 mins.

Serves 4.

1½ cups bean sprouts
¼ cup capsicum, sliced thin
For the dressing
1 clove garlic, crushed
1 tbsp soya sauce
½ tsp sugar
½ tsp red chilli powder
1 tbsp vinegar
1 tbsp peanuts, crushed
1½ tsp oil
For the garnish
1 spring onion, chopped
2 tbsp chopped coriander
For the dressing
1. In a pan, heat the oil and fry the garlic. Keep aside. Drain the oil.
2. Mix the garlic with the vinegar, soya sauce, sugar, chilli powder, red chilli and peanuts.
How to proceed
1. In a bowl, place the bean sprouts and capsicum and pour the dressing over it.
2. Toss the salad.
3. Serve chilled garnished with spring onions and coriander.
