Carrot and mint salad

Two vitamin A rich ingredients – carrot and mint superbly blended to make this light salad.

Cooking Time : Nil.
Preparation Time : 10 mins.

Serves 4.

1 cup carrots, peeled and thinly sliced
1 cup cucumber, peeled and thinly sliced
½ cup kidney beans (rajma), soaked overnight and boiled
½ cup spring onions, sliced
To be mixed into a dressing
2 tbsp mint (phudina), finely chopped
4 tsp honey
1 tbsp lemon juice
salt to taste
1. Combine all the ingredients for the salad in a bowl and chill.
2. Just before serving, add the dressing and toss well.
3. Serve immediately.
