Crunchy vegetable salad

A crunchy warm salad lightly flavoured with pepper and parsley.

Cooking Time : 15 mins.
Preparation Time : 10 mins.

Serves 4.

1 cup cabbage, cut into 25 mm. (1″) cubes
1 cup broccoli florets, parboiled
½ tsp ginger, chopped
¼ tsp garlic, chopped
1 tsp celery, chopped
1 cup pineapple cubes
¼ cup fresh pineapple juice
1 tsp oil
For the garnish
¼ tsp freshly ground black pepper
1 tbsp chopped parsley
1. Heat the oil in a pan, add the ginger, garlic and celery and stir-fry for a few seconds.
2. Add the cabbage, broccoli, pineapple cubes and juice and cook over high flame till the juice dries out.
3. Garnish with the freshly ground black pepper and chopped parsley and serve warm.
