Green peas soup

A wholesome soup which makes good use of the fibre rich vegetable – the humble green peas.

Cooking Time : 10 mins.
Preparation Time : 20 mins.

Serves 6.

4 cups clear vegetable stock
¼ cup green peas
¼ cup small cauliflower florets
¼ cup cabbage, finely chopped
¼ cup carrots, finely chopped
2 pinches sugar
¼ tsp black pepper powder
1 tsp soya sauce
3 tbsp cornflour
1½ tsp oil
salt to taste
For the garnish
2 tbsp chopped coriander
1. Add the green peas and cauliflower to the stock, bring it to a boil and cook covered for 8 to 10 minutes, till the peas and cauliflower are tender and crunchy.
2. Heat the oil, add the remaining vegetables and stir-fry over a high flame for 3 to 4 minutes.
3. Add the stock with the peas and the sugar, pepper powder and salt.
4. Mix the soya sauce and cornflour in ½ cup of water and add this mixture to the soup.
5. Cook for 3 minutes while stirring continuously.
6. Serve hot garnished with chopped coriander.
