Rajma salad

A tasty accompaniment to any Indian meal with a wealth of iron.

Cooking Time : Nil.
Preparation Time : 10 mins.

Serves 4.

2 cups red kidney beans (rajma), soaked overnight and boiled
½ cup tomatoes, chopped
1 cup onions, thinly sliced
1 spring onion, chopped
To be mixed into a dressing
2 tsp olive oil or oil
1 tbsp lemon juice
salt and pepper to taste
For the garnish
½ cup shredded lettuce
1. Mix the beans, tomato, onions and spring onions and arrange in a serving bowl.
2. Pour the dressing on top and place in the refrigerator.
3. Just before serving, surround the salad with the shredded lettuce.
You can also make this salad in Indian style by adding 2 tbsp of chopped coriander, 1 chopped green chilli and 1 tsp of lemon juice.
