Stir-fry salad

Sautéed in just a tsp of oil, this elegant salad is absolutely low in fat and high in calcium due to the addition of paneer.

Preparation Time : 10 mins.
Cooking Time : 5 mins.

Serves 4.

1 cup capsicum, cut into thin strips
1 cup low fat paneer (cottage cheese), cut into thin strips
1 spring onion, sliced
½ cup baby corn, sliced and parboiled
½ cup cucumber, sliced
½ cup broccoli florets, parboiled
¼ cup bean sprouts
¼ cup tomatoes, deseeded and sliced
1 tsp onion seeds (kalonji)
1 tsp oil
salt to taste
1. Heat the oil and add the onion seeds.
2. Add all the vegetables and salt and sauté on a high flame till the vegetables are tender.
3. Add the paneer and sauté for another minute.
4. Remove from the flame and serve immediately.
