Vegetable soup

Colourful, tasty, easy-to-cook and great to boost your vitamin A levels.

Cooking Time : 7 mins.
Preparation Time : 6 mins.

Serves 4.

Ingredients
½ cup onions, peeled
½ cup potato, peeled
½ cup tomatoes
¼ cup carrots, peeled
¼ cup bottle gourd (doodhi/lauki), peeled
2 stalks celery chopped (optional)
¼ tsp low fat butter
4 peppercorns
salt to taste
For the garnish
½ tsp dill (shepu) leaves, chopped
2 tbsp chopped coriander
3 tbsp grated low fat paneer
Method
1. Put 3 cups of water to boil.
2. Wash and thinly slice all the vegetables.
3. Combine all the vegetables, butter, peppercorns and salt with the 3 cups of hot water in a pressure cooker.
4. Pressure cook for 1 whistle.
5. Serve hot garnished with the dill, coriander and grated paneer.
Tips
You can use any of your favourites vegetables for this soup.
