Fig and cardamom delight

This sumptuous, easy-to-make, sweet dish can be made in advance and refrigerated. Figs have been used as they are low in calories as compared to other dried fruits and are also rich in fibre. To control the calorie count further, I have used skim milk and restricted the sugar to minimal.

Preparation Time : 15 mins.
Cooking Time : 10 mins.

Makes 4 glasses.

½ packet (5 grams) agar-agar, chopped
2½ cups low fat milk
3 teaspoons skim milk powder
3 teaspoons sugar
2 pinches cardamom (elaichi) powder
2 pinches saffron
8 dried figs, soaked in ½ cup water and puréed
1. Mix the milk with the milk powder and keep aside.
2. Add ¾ cup water to the agar-agar and simmer over a slow flame till it melts.
3. Add the milk mixture, sugar, cardamom powder, fig purée and mix well.
4. Pour into individual glasses and refrigerate till it sets.
