Vegetable imperial (microwave)

Cooking Time : 11 mins.

Serves 4.

1/2 teacup boiled spaghetti
1 potato, cut lengthwise (like chips)
1 carrot, cut into long strips
50 grams cauliflower, cut into strips
1 small capsicum, cut into strips
a few asparagus pieces
a few mushrooms pieces
2 teacups white sauce (microwave recipe)
3 tablespoons fresh cream (optional)
50 grams cooking cheese
2 tablespoons cheese biscuits (e.g. cheeselings)
2 tablespoons bread crumbs
a little butter
salt and pepper to taste
1. Put the potato, carrot and cauliflower in a shallow dish. Sprinkle 3 to 4 tablespoons of water and microwave on HIGH for about 5 to 6 minutes.
2. Mix the white sauce and cream. Add salt and pepper and half the cheese.
3. Add the boiled vegetables, capsicum, asparagus, mushrooms and spaghetti. Mix well.
4. Crush the cheese biscuits and sprinkle on top.
5. Sprinkle the bread crumbs and the remaining cheese. Dot with butter and microwave on HIGH for 3 to 4 minutes.
Serve immediately.
