Bow pasta with curried vegetablez

Bow-tie pasta tossed with vegetables in a curry powder flavoured sauce.

Cooking Time : 15 mins.
Preparation Time : 10 mins.

Serves 4.


1 clove garlic, chopped

1 1/2 cups cooked bow pasta (farfalle)

1 onion, chopped
1/4 cup celery, chopped
4 to 5 tomatoes, blanched and chopped
1 cup sliced baby corn, blanched
1/2 cup fresh mushrooms, sliced
1/2 cup capsicum, blanched and diced
2 tablespoons Madras curry powder
1 tablespoon butter
salt to taste
1. Heat the butter in a saucepan and saute the garlic, onion and celery for a few minutes.
2. Add the tomatoes and simmer for 5 to 7 minutes.
3. Add the pasta, baby corn, mushrooms, capsicum, Madras curry powder and salt and stir on a low flame till the tomatoes coat the pasta and vegetables.
4. Serve hot.
