Noodle salad with salsa

Makes a healthy side -serving or a main course – works well cold too, even as a packed lunch.

Cooking Time : 15 mins.
Preparation Time : 20 mins.

Serves 4.

For the noodle salad
1 cup noodles/spaghetti
½ cup corn kernels, boiled
1 tomato, deseeded and diced
1 capsicum, diced
1 spring onion with greens, chopped
3 to 4 olives, sliced
1 tablespoon olive oil
salt to taste
For the salsa
1 cup tomatoes, deseeded and finely chopped
1 spring onion, finely chopped
1 tablespoon finely chopped capsicum
2 tablespoons finely chopped coriander
1 green chilli, finely chopped
¼ teaspoon oregano
salt to taste
For the garnish
few nacho chips, crushed
5 to 6 stuffed olives, cut into halves
Method
1. Combine all the ingredients for the salsa and mash lightly for a sauce-like texture.
2. Mix all the ingredients for the noodle salad.
3. Just befor serving, add the salsa and toss.
4. Serve cold, garnished with nacho chips and oilves.
