Shell pasta with creamy mushroom sauce

A delicately flavoured mushroom sauce served with shell pasta (conchiglie).

Cooking Time : : 15 mins.
Preparation Time : : 15 mins.

Serves 4.


1/2 cup cheese, grated

3 cups cooked shell pasta (conchiqlie)

For the sauce
3 cups mushrooms, thickly sliced
3 onions, sliced
2 teaspoons garlic, chopped
2 tablespoons plain flour (maida)
3 cups milk
1/4 cup fresh cream
5 tablespoons butter
salt to taste
pepper to taste
For the sauce
1. Heat the butter in a large saucepan, add the onions and garlic and cook for some time.
2. Add the mushrooms and flour and cook for a further 3 to 4 minutes.
3. Add the milk gradually, mixing well to make sure no lumps form. Bring to a boil.
4. Add the fresh cream, salt and pepper and keep aside.
How to proceed
1. Just before serving, re-heat the sauce, adding a little milk or water if required, and toss the pasta in it.
2. Serve hot, garnished with the cheese.
If you like, brandy can be added at step 4 to flavour this sauce.
