Cheesy chicken strips

Ingredients:

100 gm: Amul Gouda Cheese (cut into batons)
1 tbsp: Green Peppercorns (crushed)
1 tbsp: Black Olives (finely chopped)
1 tbsp: Green Olives (finely chopped)
2 nos. Jalapeno Chillies (finely chopped)
1 tsp: White Vinegar       
1 tsp: Olive Oil
To taste: Salt
To taste: Black Pepper powder
2 tbsp: Amul Butter
3-4 cloves: Garlic (finely chopped)
2 nos. Green Chillies (finely chopped)
1 nos. Onion (finely chopped)
1 tsp: Fresh Thyme (minced)
1 tsp: Fresh Parsley (minced)
1 tsp: Fresh Rosemary (minced)
500 gm: Chicken Mince
1 tsp: Red Chilli Flakes
½ tsp: Dried Oregano
1 tsp: Worcestershire Sauce
6 sheets: Wonton Sheets (cut into flat strips of 1” width)
2 nos. Eggs (beaten)

Method:

1. Marinate cheese batons with crushed green pepper, olives, jalapenos, vinegar, olive oil, salt and black pepper for 10 minutes in a bowl.

2. In  a pan heat butter, add garlic, green chillies and onion.saute till onion turns golden. Mix in thyme, parsley, rosemary and chicken. Cook for 2-3 minutes on a low flame.

3. Add chilli flakes, oregano, black pepper and worcestershire sauce and cook till chicken is done.

4. On a boeard arrange 8 wonton strips side-by-side and weave 8 more horizontal wonton strips into them. The final product should look like a woven mat. Repeat process with remaining strips to make 4 mats.

5. Preheat oven to 180*C.

6. Brush prepared “mats” with egg wash and carefully place in a small strainer egg-brushed side up. Fill with gouda cheese mixture and top with chicken mince. Fold ends together overlapping each other. Brush with egg wash to ensure proper sealing.

7. Invert filled wonton “bowls” onto a greased baking tray and brush over with more egg-wash. Bake till wonton strips are golden and crisp. Serve hot.

Burnt Garlic Cream Sauce

Ingredients:

4 tbsp: Amul Fresh Cream
2 tbsp: White Wine
1 ½ tbsp: Amul Butter
2-3 cloves: Garlic
To taste: Salt
1 tsp: Black Pepper

Method:

1. In a pan heat butter, add garlic and sauté on a high flame.

2. Add wine and cook for 10 to 15 seconds, remove pan from flame and add cream, salt and pepper.

3. Mix well and serve with Cheesy Chicken in Crispy Strips.

Bell Mayo Mustard Salad

Ingredients:

1 nos. Red Capsicum (cut into juliennes)
1 nos. Yellow Capsicum (cut into juliennes)
1 tsp: Lemon Juice
1 tbsp: Mayonnaise
To taste: Salt
To taste: Ramdev Black Pepper powder
1 tbsp: Fresh Parsley (finely chopped)
½ tsp: Dijon Mustard

Method:

1. In a bowl combine red and yellow capsicum with lemon juice, mayonnaise, salt, pepper, parsley and mustard.
2. Refrigerate till chilled and serve with Cheesy Chicken in Crispy Strips.

Cup cake

Ingredients
2 cups (400g) Saffola Oats
1 ½ cups (300g) Amul curd
1 cup (200g) Flour
1 cup (200g) Sugar
2 medium Eggs
30g Butter
1 tsp Baking soda
½ tsp Salt
½ cup(100g) Chocolate chips or raisins

Method
1. Soak the oats in whisked curd for a few hours preferably overnight in a bowl refrigerated this allows for natural fermentation.
2. Pre-heat the oven to 200*C.
3. Whisk eggs butter and sugar together till light and fluffy.
4. Fold in the remaining ingredients gently, but not too much.
5. Spoon the mixture into muffin trays which have muffin paper cups inserted into the depressions.
6. Bake for 20 minutes or till done by checking the muffins with a skewer. If the skewer comes out clean the cake is done.
7. When done remove from the oven. Remove the cakes and cool on a rack.
8. Remove the paper cups and replace with fresh paper cups.
9. Note:For regular muffins please replace Oats with white flour.

Maple apple crisp

INGREDIENTS

I Apples (peeled, cored and sliced): 5 I Maple syrup: 3/4 cup I All-purpose flour: 1/2 cup I Rolled oats: 1/2 cup I Brown sugar: 1/2 cup I Salt: 1 pinch I Butter (softened): 1/2 cup.
METHOD
I Sliced apples are slathered in syrup, set in a baking dish and covered with a crumble made from brown sugar, butter and rolled oats. The crisp is then baked and served warm with scoops of rum raisin/coffee flavoured ice-cream. I Preheat oven to 375 degrees F (190 degrees C). I Place apples in an 8 x 8 inch baking dish. Toss apples with syrup. In a separate bowl, mix together flour, oats, sugar, and salt. Cut in butter until the mixture is crumbly. Sprinkle this mixture evenly over apples. I Bake in the pre-heated oven for 35 minutes, until topping is golden brown. I Serve warm or at room temperature.

Stuffed jacket potatoes

INGREDIENTS

I Oval potatoes: 6 (medium) I Spring onion: 1 (chopped) ICapsicum: 1 (chopped) I Red bell pepper: 1/2 (chopped) I Yellow bell pepper: 1/2 (chopped) I Chilli: 1 (chopped) I Garlic flake: 1 (chopped) I Mint leaves (whole): 10-12 I Beaten cream: 1/4 cup I Butter: 2 tbsp I Mustard: 2 tbsp I Grated cheese: 1/2 cup I Oil: 1 tbsp I Salt to taste I Pepper to taste.
METHOD
I Scrub unpeeled potatoes. I Boil but they should be still firm. Refrigerate, use next day. I Make crisscross slits 2/3 way down the elongated part of potato. Make sure it stands firmly. Apply slight pressure at the lower part to open the slits a bit. I Brush inside with butter, sprinkle a bit of salt. I Heat oil in a pan, add chilli, garlic, capsicum, and stir. Add all other chopped veggies except mint leaves, stir-fry. Take off fire, allow cooling. I Add salt, pepper, cream, cheese, mustard and mix well. I Meanwhile, bake potatoes in preheated oven at 200°C for 3-4 minutes. Remove, gently open out slits slightly, spoon in veggie mixture into slits. I Brush potato jackets with butter. I Return to oven and bake again at 200°C for 3-4 minutes. I Remove, garnish with mint leaves on top.

Apple kheer (Microwave)

Apple and milk combine with nutmeg and cardamom to make a delicious kheer. The quantity of sugar required will depend on sweetness of the apples. Use sweet juicy apples for best results.

Preparation Time : a few mins.
Cooking Time : 6 mins.

Makes 2 cups approx.

Ingredients
1 cup apples, peeled and grated
1½ cups full fat milk
2 teaspoons cornflour
2 tablespoons sugar
a pinch nutmeg (jaiphal) powder
¼ teaspoon cardamom (elaichi) powder
Method
1. Combine the apples, milk, cornflour and sugar in a large microwave safe bowl and mix well.
2. Microwave on HIGH for 6 minutes, stirring once after 3 minutes.
3. Add the nutmeg powder, cardamom powder and mix well.
4. Serve chilled.

Atta ka sheera (Microwave)

Wheat flor halwa which is delicious and yet easy to make.

Cooking Time : 5 min.
Preparation Time : 5 min.

Serves 4.

Ingredients
1/2 cup whole wheat flour (gehun ka atta)
1/2 cup sugar
1/2 teaspoon cardamom (elaichi) powder
1/4 cup melted ghee
For the garnish
sliced almonds
Method
1. In a glass bowl, combine the wheat flor and ghee and mix well. Microwave on HIGH for 3 minutes. Mix well.
2. Add the sugar, cardamom powder and 3/4 cup of water and microwave on HIGH for 2 minutes until the sugar has dissolved. Mix well.
3. Serve hot.

Makai sheera(Microwave)

Tender, sweet, fresh corn tempered with traditional Indian spices makes a quick and satiating breakfast.
You may also use frozen corn kernels when fresh corn is not available.

Cooking Time : 6½ mins.
Preparation Time : 10 mins.

Serves 2.

Ingredients
1 cup fresh corn, grated
½ teaspoon mustard seeds (rai)
½ teaspoon cumin seeds (jeera)
2 green chillies, slit
a pinch asafoetida (hing)
½ cup milk
½ teaspoon sugar
a few drops lemon juice
2 teaspoons oil
salt to taste
For the garnish
1 tablespoon chopped coriander
Method
1. In a microwave safe bowl, mix the oil, mustard seeds and cumin seeds and microwave on HIGH for 2 minutes.
2. Add the green chillies and asafoetida and microwave on HIGH for 30 seconds.
3. Add the corn, mix well and microwave on HIGH for 2 minutes.
4. Add the milk, salt and sugar and microwave on HIGH for 2 minutes.
5. Add the lemon juice, mix well and serve garnished with the chopped coriander.
Tips
Approx. 3 medium size corn cobs will yield 1 cup grated corn.

PAsta with chunky tomato sauce

Farfalle (bow-shaped pasta) tossed in a tomato basil sauce makes a quick and delicious snack to kids.
You may use any other pasta if the bow shaped one is not available. The time taken to cook will differ with the different shapes and sizes of the paste.

Cooking Time : 19 mins.
Preparation Time : 10 mins.

Serves 4.

Ingredients
¾ cup farfalle (bow-shaped pasta)
1 teaspoon oil
½ cup onions, finely chopped
3 large cloves garlic, finely chopped
1 tablespoon finely chopped celery
6 medium tomatoes
1 teaspoon basil or dried mixed herbs
1 tablespoon cream
1 teaspoon sugar
1 tablespoon olive oil
salt and pepper to taste
Method
1. Make a criss cross slit on each tomato and place in a microwave safe plate and microwave on HIGH for 3 minutes.
2. Place them in a bowl of cold water and keep aside for 2 to 3 minutes.
3. Peel and quarter the tomatoes into 6 to 8 pieces. Remove and discard the seeds and keep the tomatoes aside.
4. In a medium sized microwave safe bowl, heat 1½ cups of water for 2 minutes.
5. Add 1 teaspoon oil and the pasta and microwave on HIGH for 5 minutes, stirring once in between.
6. Drain and pour cold water over the pasta to arrest cooking. Drain and keep aside.
7. Add the tomatoes and microwave on HIGH for 4 minutes.
8. Add the basil, salt, pepper and microwave on HIGH for 2 more minutes.
9. Add the cream and sugar and mix well.
10. Just before serving, add the pasta mix well and microwave on HIGH for 1 more minute.
11. Serve hot.

Boiled pasta (microwave)

Cooking Time : 7 mins. 30 secs.

Serves 4.

Ingredients
250 grams pasta (noodles/spaghetti/macaroni/)
1 teaspoon oil
salt to taste
Method
1. Put 1 1/2 liters of water in a glass bowl. Microwave on HIGH for 2 1/2 minutes and bring to a boil.
2. Add the oil, pasta and salt and micorwave on HIGH for about 4 to 5 minutes, stirring once in-between after 2 minutes.
3. Remove from the cooker, cover and allow to stand for 1 to 2 minutes in case of noodles (3 to 4 minutes in case of spaghetti and macaroni). Drain.
Tips
Use as required.

Spaghetti in tomato sauce (microwave)

Cooking Time : 4 mins. 50 secs.

Serves 6.

Ingredients
2 onions, chopped

2 teacups boiled pasta

1 capsicum (optional), cut into rings

2 teacups tomato sauce

4 tablespoons tomato ketchup
2 tablespoons butter
100 grams fresh cream
100 grams grated cooking cheese
salt to taste
Method
1. Put the butter in a bowl and microwave on HIGH for about 20 seconds. Add the onions and capsicum and microwave on HIGH for 1 minute. Keep aside a few capsicum rings for decoration.
2. Add the tomato sauce and salt and microwave on HIGH for about 2 minutes, stirring once in-between after 1 minute.
3. Add the tomato ketchup, spaghetti and cream and microwave on HIGH for about 1 1/2 minutes, stirring once in-between after 45 seconds.
4. Cover with the balance capsicum rings and the grated cheese.
Tips
Serve hot.
