Rich dark chocolate cake

A rich dark chocolate cake.

Preparation Time : 5mins
Baking Time : 20 mins.

Ingredients
2 tablespoons cocoa powder
1 cup plain flour (maida)
1 teaspoon baking powder
1/2 teaspoon soda bi-carbonate
1/2 can (400 grams for full can) condensed milk
1/2 cup melted butter
1 teaspoon vanilla essence
Method
1. Sift the cocoa powder, flour, baking powder and soda bi-carbonate.
2. Combine all the ingredients together with 1/2 cup (100 ml.) of water in a bowl and mix well using a whisk.
3. Pour this mixture into a greased 150 mm. (6″) diameter baking tin.
4. Bake in a pre-heated oven at 180°C (360°F) for 20 minutes or till a knife inserted into the cake comes out clean.
5. Unmould and cool on a wire rack.
6. Cut into 1″ squares and serve or use as required.

Dainty chocolate cakes

Children will love being served individual cakes with yummy chocolate icing.

Preparation Time : 15 min.
Cooking Time : 20 min.

Makes 20 pieces.

For the small chocolate cakes
small chocolate cakes
For the chocolate glace icing
225 grams icing sugar
3/4 tablespoon cocoa powder
1 teaspoon melted butter
For decoration
small candles or gem sweets or lemon drops sweets
For the chocolate glace icing
1. Sieve the icing sugar and cocoa powder together.
2. Gradually add about 2 tablespoons of hot water and the butter and beat well.
How to proceed
1. Spread the chocolate glace icing over the cakes and decorate each cake with small candles or sweets.

Small chocolate cakes

Baking Time : 20 min.
Preparation Time : 15 min.

Makes 20 pieces.

Ingredients
100 grams self raising flour or plain flour mixed with 1 1/2 teaspoons baking powder
2 tablespoons cocoa powder
100 grams butter or margarine
100 grams powdered sugar
2 eggs
1/4 teacup milk (approx.)
3/4 teaspoon vanilla essence
Method
1. Sieve the flour and cocoa powder together.
2. Take out the butter from the refrigerator 1 hour in advance.
3. Cream the butter and sugar very well.
4. When the mixture is light and creamy, add the eggs, one at a time, beating each time thoroughly. If the mixture curdles while adding the egg, add a little flour before adding the next egg.
5. Fold in the flour mixture and add milk until the mixture forms a dropping consistency.
6. Add the vanilla essence and mix well.
7. Fill tiny paper cups upto three-quarter height with the mixture and bake in a hot oven at 200 degree C (400 degree F) for 20 minutes.
8. Cool the cakes.
Tips
Sprinkle a little water when the cakes are cool.

Black forest gateau (chocolate) recipe

A classic German dessert of chocolate sponge layered with cream and cheeries.Cooking Time : 30 mins.
Preparation Time : 15 mins.

Makes 1 gateau.

Ingredients
1 recipe chocolate cake (recipe given below)
For the Chantilly cream
1 1/4 cups (250 grams) fresh cream, chilled
4 tablespoons powdered sugar
1 teaspoon vanilla essence
To be mixed into a soaking syrup
2 tablespoons sugar
2 tablespoons cherry liquer (optional)
1/2 cup water
For the filling
1 1/2 cups cherries, deseeded
For the garnish
dark chocolate curls
6 cherries, deseeded
1/4 cup whipped cream
For the Chantilly cream
1. Combine the cream, sugar and vanilla essence and whisk till soft peaks form.
2. Keep refrigerated till required.
How to proceed
1. Slice the chocolate cake horizontally into 2 equal parts.
2. Soak trhe bottom layer of the chocolate cake with half the soaking syrup.
3. Spread half the Chantilly cream on the soaked layer of the cake.
4. Place half the cherries on top and sandwich with the second layer of the chocolate cake.
5. Soak witrh the remaining soaking syrup and spread the remaining Chantilly cream on top.
6. Garnish with the remaining cherries, chocolate curls and whipped cream swirls as shown in the above picture.
Tips
You can also use grated chocolate to garnish thte cake. Sprinkle it on the sides as well as on the top.

Chocolate lemon mousse cake recipe

Rich chocolate cake topped with a tangy lemon mousse.

Cooking Time : 40 mins.
Preparation Time : 30 mins.

Makes 1 cake.

For the chocolate cake
1/2 cup plain flour(maida)
1 tablespoon cocoa powder
2 tablespoons sour curds
1/4 teaspoon soda bi-carb
1/4 cup melted butter
1/3 cup powdered sugar
1/2 teaspoon vanilla essence
For the garnish
whipped cream
lemon slices
fresh fruits
mint sprigs
For the lemon mousse
1 tablespoon cornflour
1 cup milk
4 tablespoons sugar
1 teaspoon lemon rind, grated
juice of 2 lemons
2 to 3 drops lemon yellow food colouring
5 grams agar agar(china grass)
1 cup (200 grams) fresh cream, chilled
To be mixed into a soaking syrup
2 tablespoons sugar
1 teaspoon lemon juice
1/3 cup water
For the lemon mousse
1. Dissolve the cornflour in 3 tablespoons of cold water. Keep aside.
2. Heat the milk, add the dissolved cornflour and sugar and bring to a boil. Cool completely.
3. Add the lemon rind, lemon juice and lemon yellow food colouring to the milk and mix well.
4. Dissolve the agar agar in 1/2 cup (100 ml.) of water and cook over gentle heat till the agar agar dissolves. Keep warm.
5. Gently whip the cream till soft peaks form and keep refrigerated.
6. Mix the lemon mixture, agar agar and cream together using a spatula.
How to proceed
1. Place the chocolate cake in a 200 mm. (8″) diameter loose bottomed cake tin. Sprinkle the soaking syrup over it.
2. Spoon the lemon mousse mixture over it. Refrigerate till the mousse has set completely.
3. Unmould the mousse cake.
4. Garnish with whipped cream, lemon slices, fruits and mint sprigs.
5. Serve chilled.
Method
1. Sieve the flour and cooca powder. Keep aside.
2. Mix the curds and soda bi-carb in a bowl and keep aside.
3. Combine the butter, sugar and 1/4 cup of hot water in another bowl.
4. Add the flour mixture, curds and vanilla essence and mix to make a smooth batter.
5. Put the mixture in a 200 mm. (8″) diameter greased baking tin.
6. Bake in a pre-heated oven at 200°C ( 400°F) for 30 minutes or until a knife inserted in the cake comes out clean.
7. Remove from the oven and cool.
Tips
If the agar agar has not dissolved evenly, strain the mixture before you mix it with the cream and lemon mixture.

Fruit and chocolate gateau

Chocolate cake inerlaced with seasonal fruits and Chantilly cream makes a sumptuous dessert.
Cooking Time : 30 min.
Preparation Time : 15 min.

Makes 1 gateau.

 

Ingredients

1 recipe chocolate cake(given below)
 

 

 
For the Chantilly cream
1 1/4 cups (250 grams) fresh cream
4 tablespoons powdered sugar
1 teaspoon vanilla essence
To be mixed into a soaking syrup
2 tablespoons sugar
2 tablespoons fruit juice
1/2 cup water
For the filling
1 1/2 cups seasonal fruits (apples, melon scoops, cherries, kiwis, strawberries, peaches, mangoes etc.)
For the garnish

dark chocolate curls
 

 

For the Chantilly cream
1. Combine the cream, sugar and vanilla essence in a clean and dry bowl and whisk till soft peaks form.
2. Keep refrigerated till required.
How to proceed
1. Slice the chocolate cake horizontally into 3 equal parts.
2. Soak the bottom layer of the chocolate cake with the soaking syrup.
3. Spread 1/3 of the Chantilly cream on the soaked layer of the cake.
4. Place 1/2 cup of fruit on top and sandwich with the second layer of the chocolate cake.
5. Soak with the soaking syrup and spread 1/3 of the Chantilly cream on the soaked layer of the cake.
6. Top with 1/2 cup of the fruit and sandwich with third layer of the chocolate cake.
7. Soak with the remaining soaking syurp and spread the remaining Chantilly cream on top.
8. Garnish with the remaining fruit and chocolate curls and refrigerate.
9. Serve chilled.

CHOCOLATE CURLS


 

Ingredients
1 bar or thick piece of chocolate
Method
1. Bring a thick piece or bar of chocolate to room temperature (Chocolate which is too warm will slice and chocolate which is too cold will grate).
2. To make the curls, use a sharp knife or a vegetable peeler firmly along the edge of the chocolate to produce long or short curls.
3. Use a skewer or toothpick to transfer the curls to the dessert or cake you wish to garnish.
4. Use pieces of the garnish of mocha mouse cake.
