Green peas pulao (microwave)

Cooking Time : 16 mins. 15 secs.

Serves 2.

Ingredients
1 teacup uncooked Basmati rice
1 teacup green peas
2 sticks cinnamon
2 cloves
1 bay leaf
1 1/2 green chillies, chopped
4 tablespoons chopped onion
2 tablespoons ghee
salt to taste
Method
1. Put the ghee in a glass bowl and microwave on HIGH for 15 seconds.
2. Add the cinnamon, cloves, bay leaf, green chillies and chopped onion. Microwave on HIGH for about 2 minutes, stirring once in-between after 1 minute.
3. Add the rice, green peas, 2 1/4 teacups of water and salt. Cover and microwave on HIGH for about 12-14 minutes, stirring once in-between after 5 to 6 minutes.
Tips
Serve hot.

Moongdal khichdi (Microwave)

Cooking Time : 15 mins. 30 secs.

Serves 4.

Ingredients
1 teacup uncooked rice
1 teacup sprouted moong
2 to 3 pinchs asafoetida
1/4 teaspoon turmeric powder
2 tablespoons ghee
To be mixed together in masala mixture
2 teaspoons coriandercumin seed (dhana-jeera) powder
2 teaspoons sugar
1 teaspoon chilli powder
2 tablespoons grated fresh coconut
2 tablespoons chopped coriander
a pinch asafoetida
salt to taste
Method
1. Wash the rice. Drain.
2. Wash the moong sprouts. Drain.
3. Put the ghee in a glass bowl and microwave on HIGH for about 30 seconds.
4. Add the rice, moong sprouts, asafoetida, turmeric powder, masala mixture and 2 1/2 teacups of water.
5. Cover and microwave on HIGH for about 15 minutes, stirring in-between after every 5 minutes.
Tips
Serve hot.

Savoury rice with vegetables

Cooking Time : 16 mins. 50 secs.

Serves 4.

Ingredients
3/4 teacup uncooked rice
50 grams carrots, chopped
50 grams green peas
1 potato, chopped
2 medium onions, sliced
150 grams cauliflower, chopped
juice of 1 lemon
2 tablespoons ghee
salt ot taste
To be ground into a paste
1 tablespoon grated fresh coconut
2 green chillies
4 cloves
2 to 3 cardamoms
2 small sticks cinnamon
1 teaspoon khus-khus
12 mm. piece ginger
For the decoration
fried onion slices
fried cashewnuts
Method
1. Put the ghee in a glass bowl and microwave on HIGH for about 30 seconds. Add the onions and microwave on HIGH for 1 minute or until light pink in colour.
2. Add the paste and microwave on HIGH for 20 seconds.
3. Add the rice, vegetables, lemon juice and salt and mix very well. Add 1 3/4 teacups of water and microwave on HIGH for 12 minutes, stirring in-between after every 3 minutes.
4. Put off the cooker and allow to stand for 3 minutes.
5. Decorate with fried onions and cashewnuts.
Tips
Serve hot.

Masala bhaat (Microwave)

Serves 4.

Ingredients
1/2 teacup uncooked Basmati rice
50 grams green peas
50 grams potatoes
50 grams brinjals
1 onion, chopped
2 tablespoons chopped coriander
1/4 teaspoon turmeric powder
2 teaspoons coriandercumin seed (dhana-jira) powder
2 teaspoons chilli powder
3/4 teaspoon garam masala
1 1/2 tablespoons ghee
salt to taste
1 tablespoon chopped coriander for decoration
To be ground into a paste
2 tablespoons grated fresh coconut
2 green chillies
12 mm. piece ginger
5 to 6 cloves garlic
Method
1. Cut the potatoes and brinjals into big pieces.
2. Mix the rice, vegetables, onion, coriander, turmeric powder, coriander-cumin seed powder, chilli powder, garam masala, paste, salt and ghee and add 1 1/2 teacups of water.
3. Cover and microwave on HIGH for 17 to 18 minutes, stirring in-between after every 5 to 6 minutes.
4. Decorate with chopped coriander.
Tips
Serve hot.

Green pulao (Microwave)

Serves 4.

Ingredients
1 teacup uncooked Basmati rice
275 grams cauliflower, cut into big pieces
175 grams green peas
225 grams small potatoes (whole)
2 sticks cinnamon
2 cloves
2 cardamoms
2 bay leaves
2 onions chopped
4 tablespoons ghee
salt to taste
To be ground into a paste
1 big bunch fresh coriander
6 green chillies
25 mm. piece ginger
10 cloves garlic
Method
1. Put the ghee in a glass bowl and microwave on HIGH for about 30 seconds.
2. Add the onion and microwave on HIGH for 1 1/2 minutes, stirring once in-between after 30 seconds.
3. Add the paste and microwave on HIGH for 1 minute, stirring once in-between after 30 seconds.
4. Add the cinnamom, cloves, cardamom and bay leaves and microwave on HIGH for 1 minute.
5. Add the rice, vegetables, salt and 2 teacups of water.
6. Cover and microwave on HIGH for about 15 minutes or until the water is absorbed and the vegetables are cooked.
Tips
Serve with kadhi or curds.

Ek toap na dal bhaat

A speciality of Gujarat which makes a meal by itself.

Preparation Time : 20 min.
Cooking Time : 18 min.

Serves 4.

Ingredients
1 cup long grained rice
1/2 cup toovar (arhar) dal
2 to 3 pinches asafoetida (hing)
a pinch soda bi-carb
1/4 teaspoon turmeric powder (haldi)
10 small onions
5 small potatoes
2 to 3 small brinjals
1/3 cup green peas
2 tablespoons ghee
To be mixed together into a masala
2 teaspoons coriandercumin seed (dhania-jeera) powder
2 teaspoons sugar
1 teaspoon chilli powder
1/2 cup grated fresh coconut
4 to 5 tablespoons chopped coriander
a pinch asafoetida (hing)
salt to taste
For the garnish
2 tablespoons ghee
Method
1. Make a criss-cross slits on the onions, potatoes and brinjals, taking care not to separate the segments. Stuff the slits with the masala mixture. About half the mxiture will remain.
2. Clean and wash the rice and dal separately.
3. Soak the dal in warm water for 30 minutes. Drain and keep aside.
4. Put the ghee asafoetida, toovar dal, soda bi-carb and turmeric powder in a glass bowl and microwave on HIGH for 2 minutes.
5. Add the vegetables, rice the remaining masala, salt with 3 cups of hot water and mix well. Microwave on HIGH for 16 minutes, stirring twice in between after every 5 to 6 minutes.
6. Pour some ghee over the dish and serve hot with buttermilk.

Cabbage rice

A delicately flavoured rice dish.

Preparation Time : 10 min.
Cooking Time : 15 min.

Serves 4.

Ingredients
1 cup long grained rice
1 onion, grated
1/2 cup shredded cabbage
1 capsicum, sliced
1 teaspoon pepper powder
1/2 cup grated cheese
2 tablespoons butter
salt to taste
Method
1. Clean and wash the rice. Soak in warm water for about 10 minutes. Drain and keep aside.
2. Combine the grated onion and butter in a glass bowl and microwave on HIGH for 2 minutes.
3. Add the rice, 2 cups of hot water and salt and microwave on HIGH for 10 minutes. Stirring twice in between after every 3 to 4 minutes.
4. Add the cabbage, capsicum, pepper powder and half of the cheese and mix well.
5. Microwave on HIGH for 3 minutes. Allow it to stand for 3 minutes.
6. Serve hot garnished with the remaining cheese.

Fada ni khichdi

A traditional Gujarati preparation made of broken wheat. A meal by itself.

Preparation Time : 10 min.
Cooking Time : 13 min.

Serves 4.

Ingredients
1 cup broken wheat (dalla), cleaned and washed
1 teaspoon cumin seeds (jeera)
1/4 teaspoon asafoetida (hing)
2 cloves
12 mm. (1/2″) piece cinnamon
1/2 cup onion, diced
1/2 cup french beans, diced
1/2 cup carrots, diced
1/2 cup cauliflower, cut into florets
1/4 cup green peas
1/2 teaspoon green chilliginger paste
2 teaspoons chilli powder
1/2 teaspoon turmeric powder (haldi)
2 tablespoons ghee
salt to taste
For the garnish
2 tablespoons ghee
2 tablespoons chopped coriander
Method
1. In a glass bowl, combine the ghee, cumin seeds, asafoetida, cloves and cinnamon and microwave on HIGH for 1 minute.
2. Add the broken wheat, mix well and cover with a lid. Microwave on HIGH for 1 minute, stirring once in between after 30 seconds.
3. Add all the other ingredients and 2 cups of hot water and mix well.
4. Cover with a lid and microwave on HIGH for 9 minutes.
5. Stir well and microwave on HIGH for 2 more minutes.
6. Pour the ghee over the dish and serve hot, garnished with the coriander.
Tips
This dish tastes great with curds and pickle.
Broken wheat is also called “Bulgur” wheat.

Spicy pulao (Microwave)

Rice and vegetable flavoured with a spicy red chilli paste. A firey feast.

Cooking Time : 13 min.
Preparation Time : 10 min.

Serves 4.

Ingredients
1 cup long grained rice
1/2 cup green peas
1/2 cup carrots, diced
2 tablespoons curds
a few mint leaves
2 tablespoons ghee
salt to taste
To be ground into a chilli paste
6 Kashmiri chillies
3 garlic cloves
12 mm. (1/2″) piece ginger
2 teaspoons coriandercumin seed (dhania-jeera) powder
Method
1. Clean and wash the rice. Soak in warm water for about 10 minutes. Drain and keep aside.
2. In a glass bowl, combine the ghee and the chilli paste and microwave on HIGH for 1 minute.
3. Add the rice, peas, carrots, curds and salt with 2 1/2 cups of water. Microwave on HIGH for 12 minutes, stirring twice in between after every 4 minutes.
4. Add the mint leaves and toss tightly.

Masala bhaat (Microwave)

This Maharashtrian recipe of rice, tendli and peas, simmered with spices makes a great meal by itself.

Preparation Time : 15 min.
Cooking Time : 15 min.

Serves 4.

For the spice powder
2 cloves
12 mm. (1/2″) piece cinnamon
1 teaspoon coriander (dhania) seeds
1 teaspoon cumin seeds (jeera)
1/2 cup grated dry coconut (kopra)
2 tablespoons sesame (til) seeds
Ingredients
1 cup long grained rice
1 cup tendli, slice horizontally
1/2 cup green peas
1/2 teaspoon mustard seeds (rai)
1/2 teaspoon cumin seeds (jeera)
3 green cardamoms
12 mm. (1/2″) piece cinnamon
5 cloves
1/4 teaspoon fenugreek (methi) seeds
2 green chillies
5 curry leaves
1/4 teaspoon asafoetida (hing)
1/2 teaspoon turmeric powder (haldi)
1/2 cup grated fresh coconut
1/4 cup chopped coriander
8 to 10 nos. cashewnuts, fried
1 tablespoon ghee
salt to taste
For the spice powder
1. Combine all the ingredients in a glass plate and microwave on HIGh for 2 minutes.
2. Grind to a fine powder in a food processor. Keep aside.
How to proceed
1. Clean and wash the rice. Soak in warm water for about 10 minutes. Drain and keep aside.
2. Combine the mustard seeds, cumin seeds, cardamoms, cinnamon, cloves, fenugreek seeds, green chillies, curry leaves, asafoetida and ghee in a glass bowl and microwave on HIGH for 1 minute.
3. Add the rice, tendli, peas, turmeric powder, spice powder and salt and mix well. Microwave on HIGH for 2 minutes.
4. Add 2 1/2 cups of water to the rice mixture, mix well and microwave on HIGH for 10 minutes, stirring onece in between after 5 minutes.
5. Add the coconut, coriander and cahewnuts and mix well.
6. Serve hot.
