Mini pizza

Cooking Time : 30 minutes.
Preparation Time : 30 minutes.

Makes 16 small pieces.

For the dough
200 grams whole wheat flour
10 grams fresh yeast
3/4 teaspoon salt
3/4 teaspoon sugar
1 teaspoon oil
For the sauce
400 grams tomatoes
2 small onions, chopped
3 to 4 cloves crushed garlic
1/2 teaspoon chilli powder
1 teaspoon sugar
1/2 teaspoon oregano or a pinch ajwain
1 teaspoon oil
salt to taste
For the topping
2 capsicums, cut into rings
4 onions, cut into rings
2 tomatoes, cut into slices

50 gms grated paneer or 75 gms mozzarella cheese

For the dough
1. Sieve the flour with the salt and sugar. Add the oil and mix well.
2. Make a well in the centre and crumble the yeast in the centre.
3. Sprinkle 1/2 teacup of warm water over the yeast. Wait for a few minutes.
4. Mix the yeast in the flour and add enough water to make a dough.
5. Cover the dough with a wet cloth to “prove”. Leave for 30 minutes or until it is double in size.
6. Knead the dough for 1 minute.
7. Divide the dough into 16 parts.
8. Roll out each part to 75 to 100 mm. diameter rounds.
9. Prick lightly with a fork.
10. Brush a baking tray lightly with oil and arrange the rounds on the tray. Keep aside for 15 minutes.
11. Bake in a hot oven at 200 degree C for 15 minutes.
For the sauce
1. Chop the tomatoes and drain.
2. Heat the oil, add the onions and garlic and fry for 3 minutes.
3. Add the tomatoes, chilli powder, sugar and salt and boil for 10 minutes.
4. Blend the mixture in a liquidiser.
5. Add the oregano.
How to proceed
1. When you want to serve, spread some sauce on top of each pizza.
2. Arrange the capsicum and onion rings and tomato slices on top.
3. Sprinkle the paneer on top. If you like, use a mixture of paneer and cream.
4. Bake in a hot oven at 200 degree C for 5 to 10 minutes.
5. Cut into pieces and serve hot.
Tips
Health Information :
Prepared in this way, the pizza provides proteins in the cheese, carbohydrates in the crust and vitamins and minerals in the tomato sauce.
Which shifts it from the level of junk food to that of a health food.

Pizza on crackers

A quick variation of serving pizzas.

Cooking Time : 15 min.
Preparation Time : 10 min.

Makes 50 pizzas.

Ingredients
25 cream crackers biscuits
For the pizzas sauce
1/2 kg tomatoes
1 onion, chopped
3 cloves garlic, crushed
1/2 teaspoon chilli powder
1 teaspoon sugar(approx.)
1/2 teaspoon oregano
2 tablespoons oil
salt ot taste
For the topping
1 capsicum, sliced
4 tablespoons grated cheese
For the pizza sauce
1. Chop the tomatoes. Drain the liquid.
2. Heat the oil and fry the onion and garlic for 1 to 2 minutes.
3. Add the chopped tomatoes, chilli powder, sugar and salt and boil until the tomatoes are soft.
4. Add the oregano and mix well.
How to proceed
1. Cut the crackers in half.
2. Spread a little sauce on each cracker half and top with the capsicum and grated cheese.
Tips
VARIATION : MINI PIZZAS : (Picture Above)
Make mini pizzas the same way using ready made coin pizza base from the market.
Top with grated cheese, spring onions and a dash of chilli powder.

Cooking Time : 20 min.
Preparation Time : 60 min.

Serves 6.

For the pizza dough
250 grams (9 oz.) plain flour (maida)
10 grams (1/3 oz.) fresh yeast or 1 teaspoon dry yeast
2 teaspoons oil
1/2 teaspoon sugar
1/2 teaspoon salt
For the filling
1 packet (200 grams) fresh mushrooms or 2 teacups cooked corn
1 chopped onion
1 chopped capsicum
1 tablespoon oil
1 teaspoon lemon juice
2 chopped green chillies
salt to taste
For the pizza sauce
500 grams (1 1/8 lb.) red tomatoes
1 onion, chopped
3 cloves garlic, crushed
1/2 teaspoon chilli powder
1 teaspoon sugar (approx.)
2 tablespoons oil
salt to taste.
For the baking

5 to 6 tablespoons grated cheese

1 teacup white sauce

For the pizza dough
1. Sieve the flour with the sugar and salt.
2. Add the oil and mix well.
3. Make a well in the centre. Crumble the yeast and put in this well.
4. Sprinkle 1/2 teacup of warm water over the yeast. Wait for 5 minutes.
5. Mix the yeast with the flour. Add enough water to make a semi-soft dough.
6. Knead the dough for 5 to 7 minutes.
7. Cover the dough with a wet cloth and leave for 45 minutes or until double in size.
8. Knead the dough for 1 minute.
For the filling
1. Heat the oil and fry the onion for 1 minute.
2. Add the capsicums and green chillies and fry again for 1 minute.
3. Chop the mushrooms.
4. Add the chopped mushrooms, lemon juice and salt and cook for 3 minutes.
5. Drain.
For the pizza sauce
1. Chop the tomatoes. Drain the liquid.
2. Heat the oil and fry the onion and garlic for 1 to 2 minutes.
3. Add the chopped tomatoes, chilli powder, sugar and salt and boil until the tomatoes are soft.
4. Blend in a liquidiser.
How to proceed
1. Roll out the dough into thin puris to fit a muffin tray.
2. Grease a muffin tray thoroughly and press the puris inside.
3. After 10 minutes, spread a little filiing, plenty of pizza sauce and little white sauce on each round.
4. Sprinkle the cheese on top and bake in a hot oven at 200 degree C (400 degree F) for 10 to 12 minutes.
5. Serve hot.
Tips
Instead of the above pizza dough, you can straightaway use readymade pizza bread.

2 tablespoons plain flour (maida)
2 teacups milk
salt and pepper to taste
Method
1. Melt the butter.
2. Add the flour and cook on a slow flame until froth appears, while stirring throughout.
3. Add the milk gradually and stir continually until the sauce thickens.
4. Add salt and pepper and mix well.
