Pista barfi

Cooking Time : 20 mins.
Preparation Time : 10 mins.

Makes approx. 1 1/4 cups.

Ingredients
1 cup (100 grams) pistachios
1/2 cup (50 grams) sugar
1/4 teaspoon cardamom powder
a few drops of green food colouring (optional)
Method
1. Soak the pistachios in warm water for about 30 minutes.
2. Drain all the water, peel the pistachios and blend them to a fine paste in a food processor. Keep aside.
3. Dissolve the sugar in 1/2 cup of water and prepare a syrup of one string consistency.
4. Add the pista paste, cardamom powder and green colour and cook over a slow flame, stirring continuously till the mixture leaves the sides of the pan (approx. 5 to 7 minutes).
5. Transfer to a plate and cool slightly. Keep aside.
6. Use as required.

Pista kaju sandwich

Pista kaju sandwich

Pista barfi sandwiched with dry fruits and flavoured wih saffron and cardamom.

Preparation Time : 30 mins.
Cooking Time : 10 mins.

Makes 8 pieces.

Ingredients
1 recipe pista barfi (see below)
ghee for greasing
For the filling
3 tablespoons sugar
1/2 cup dried nuts (almonds, cashewnuts, walnuts)
3 tablespoons powdered cashewnuts
a few saffron strands
1/4 teaspoon cardamom (elaichi) powder
For the garnish
edible silver leaves (varq)
a few saffron strands, dissolved in milk
Method
1. Make the pista barfi as specified in the recipe.
2. Divide the mixture into 2 equal portions.
3. Roll out each portion with the help of a greased rolling pin on a sheet of plastic into a 125 mm. (5″) diameter circle and keep covered.
For the filling
1. In a pan, combine the sugar with 4 tablespoons of water and simmer to get a syrup of 1 string consistency.
2. Add all the other ingredients and mix well for 2 to 3 minutes. Keep aside to cool.
How to proceed
1. Place one pista barfi circle on a plate and spread the filling mixture evenly on it.
2. Top with the second pista barfi circle and allow to set for 20 to 30 minutes.
3. Cover with silver varq and cut the sandwich into 8 wedges.

Pista badam katli recipe(sugarfree)

Powdered almonds and pistachios sweetened with honey.

Preparation Time : 10 mins.
Cooking Time : Nil.

Makes 16 pieces.

Ingredients

1/2 cup almonds, blanched, peeled and powdered

1 teaspoon sliced pistachios
1/4 teaspoon cardamom(elaichi) powder
2 tablespoons honey
a few saffron strands
Other ingredients
1 teaspoon ghee for greasing
For the garnish
1 to 2 teaspoons sliced pistachios
Method
1. Combine all the ingredients except the ghee in a bowl and knead gently into a dough.
2. Gently roll out the dough between 2 sheets of plastic into a square of 100 mm. x 100 mm. (4″ x 4″).
3. Garnish with sliced pistachios and press the rolling pin over, so that they stick firmly to the katli.
4. Cut into 16 squares of 25 mm. (1″) each.
Tips
As far as possible, use natural honey instead of the pre-packaged commercially available brands.

Chequered barfi

Chequered barfi

Almond, pistachio and cashewnut barfi layered attractively.

Cooking Time : Nil.
Preparation Time : 15 mins.

Makes 8 pieces.

Ingredients
1 recipe badam barfi (see below)
1 recipe cashew barfi (see below)
1 recipe pista barfi (see below)
a few saffron strands
1 tablespoon milk
4 to 5 edible silver leaves (varq)
Method
1. Make the badam, cashew and pista barfis as mentioned in their respective recipes.
2. Dissolve the saffron in the milk, add it to the cashew barfi and mix well.
3. Divide the badam barfi, cashew barfi and pista barfi into 3 equal portions.
4. Roll out each portion into a cylindrical of 200 mm. (8″) length and 6 mm. (1/4″) thickness.
5. On a sheet of plastic, place one badam roll, one cashew roll and one pista roll next to each other, to form a layer.
6. Top the first layer with a cashew roll, pista roll and badam roll (in that order).
7. Top with the third layer of pista roll, badam roll and cashew roll.
8. Press gently so that all the barfi rolls stick together to form a rectangle.
9. Garnish the rectangle with the silver leaves.
10. Cut the rectangle into 8 slices of 25 mm. (1″) thickness.

Recipe for making BADAM BARFI

Method
1. Soak the cashewnuts in warm water for about 30 minutes and wash them 2 to 3 times.
2. Drain all the water out and blend the cashewnuts to a fine paste. Keep aside.
3. Dissolve the sugar in 1/2 cup of water and prepare a syrup of one string consistency.
4. Add the cashew paste and cook over a medium flame, stirring continuously till the mixture leaves the sides of the pan (approx. 5 to 7 minutes).
5. Transfer to a plate and cool slightly. Keep aside.
6. Use as required.

Dilpasand barfi

Dilpasand barfi

A delectable combination of figs, cashew and pistachio barfis, rolled to create this tricolour Swiss roll.

Cooking Time : Nil.
Preparation Time : 10 mins.

Makes 8 slices.

Ingredients
2 tablespoons broken cashewnuts

1/2 recipe anjeer and cashew burfi and pista barfi

poppy seeds (khus khus) for coating
Method
1. Make the anjeer, cashew and pista barfi as mentioned in the respective recipes.
2. Roll out the anjeer barfi into a rectangle of 100 mm. x 150 mm. (4″ x 6″).
3. Add the broken cashewnuts to the cashew barfi and mix well.
4. Roll out the cashew barfi into a rectangle of 87 mm. x 150 mm. (3 1/2″ x 6″). Place this on top of anjeer rectangle.
5. Roll out the pista barfi into a cylindrical roll of 150 mm. (6″) width and 12 mm. (1/2″) thickness.
6. Place the pista barfi roll on one side of the anjeer-cashew rectangle.
7. Roll tightly starting from the end where the pista barfi roll is placed and seal the edges completely.
8. Gently press the roll till it is about 200 mm . (8″) long.
9. Roll this onto poppy seeds so that the poppy seeds coat the barfi completely.
10. Cut the roll into 8 slices of 25 mm. (1″) thickness.

ANJEER BARFI

Preparation Time : 10 mins.
Cooking Time : 15 mins.

Makes 1/3 cup.

Ingredients
6 nos. (50 grams) anjeer (dried figs)
2 tablespoons sugar
1/4 teaspoon cardamom powder
Method
1. Puree the figs till they are broken down into very small pieces. This should measure about 1/3 cup.
2. In a pan, combine the sugar with 2 tablespoons of water and prepare a sugar syrup of 1 string consistency.
3. Add the figs and cardamom powder and cook for 4 to 5 minutes over a slow flame, stirring continuously.
4. Reamove from the fire and transfer to another plate. Cool completely.
5. Use as required.

 

CASHEW BARFI

Cooking Time : 20 mins.
Preparation Time : 10 mins.

Makes 1 1/4 cups.

Ingredients
1 cup (100 grams) cashewnuts. broken
1/2 cup (50 grams) sugar
1/4 teaspoon canned powder
Method
1. Soak the cashewnuts in warm water for about 30 minutes and wash them 2 to 3 times.

For making Pista Paan, first we would have to prepare Pista barfi.

Makes approx. 1 1/4 cups.

Ingredients for making Pista Paan Recipe

1 recipe pista barfi

For the filling

1 tablespoon powdered sugar
1 tablespoon pistachios, blanched, peeled and chopped
2 tablespoons almonds, blanched, peeled and chopped
2 tablespoons gulkand
1 tablespoon poppy seeds (khus khus)
1/4 teaspoon cardamom (elaichi) powder
a few saffron strands

For the garnish

3 edible silver leaves (varq )

Method for preparing Pista Paan Recipe

1. Make the pista barfi as specified in the recipe.

2. Roll out this dough in between 2 sheets of plastic till it is 6 mm. (1/4″) thick. Cut 8 squares of 75 mm. x 75 mm. (3″ x 3″) each (re-roll the scrap if required).

3. Keep these squares covered with plastic till required.

4. Divide the filling into 8 equal portions.

5. Place a portion of the filling diagonally on each pista barfi square.

6. Shape each square into a cone, by bringing the opposite ends together.

7. Cover the pista cone completely with the silver leaf.

8. Repeat for the remaining filling and pista barfi squares to make 7 more paans.
