Protein poha

A simple breakfast prepartion made of poha and kabuli chana which is full if energy and protein to keep you going for the day.

Cooking Time : 20 mins.
Preparation Time : 10 mins.

Serves 4.

Ingredients
2 cups poha (beaten rice)
1/3 cup kabuli chana (chick peas)
1 onion, chopped
1 green chilli, chopped
1 tomato, chopped
2 teaspoons lemon juice
1 tablespoon oil
salt to taste
For the garnish
2 tablespoons chopped coriander
Method
1. Wash and soak the kabuli chana for about 6 hours.
2. Pressure cook the kabuli chana. Drain and keep aside.
3. Heat the oil in a saucepan. Add the oinion and green chilli and saute till the onion turns translucent.
4. Add the tomato and cook for a further 2 minutes.
5. Add the kabuli chana, lemon juice and salt and mix well. Remove from the fire.
6. Sprinkle some water on the poha to moistern it and add it to the kabuli chana mixture.
7. Mix well and garnish with the coriander. Serve hot.

Baked poha

When unexpected guests drop in, this quick recipe should come to your rescue.

Baking Time : 15 min.
Preparation Time : 10 min.

Serves 4.

Ingredients
2 teacups poha (flattened rice flakes), thick variety
2 tablespoons chopped coriander
1 green chilli, chopped
6 tablespoons skim milk yoghurt (non-fat)
1 tablespoon soaked fine semolina
2 teaspoons lemon juice
1 teaspoon sugar
1 tablespoon chopped coriander
salt to taste
For the tempering
2 teaspoons oil
1/2 teaspoon mustard seeds
a pinch asafoetida
Method
1. Wash the poha in running water for a few seconds.
2. Add the coriander, green chilli, yoghurt, semolina, lemon juice, sugar and salt and mix well.
3. Grease a baking dish and spread this mixture evenly.
4. For the tempering, heat the oil and add the mustard seeds and asafoetida. Fry until they crackle.
5. Sprinkle the tempering over the poha mixture. Bake in a hot oven at 200 degree C (400 degree F) for 10 to 15 minutes.
6. Cut into pieces. Decorate with the coriander. Serve hot.

Papad poha (Microwave)

Flaked rice and papad sautéed with spices and peanuts. Using thinner variety of poha known as patla poha or nylon poha, helps to make crispier snack.

Preparation Time : a few mins.
Cooking Time : 4 mins. 20 sec.

Makes 1½ cups.

Ingredients
5 small papads
1 cup thin beaten rice (patla poha)
½ teaspoon mustard seeds (rai)
1 tablespoon roasted chana dal (daria)
2 green chillies, slit
4 to 5 curry leaves
a pinch turmeric powder (haldi)
a pinch asafoetida (hing)
½ teaspoon powdered sugar
2 tablespoons oil
salt to taste
Method
1. Place 5 papads separately on the microwave safe plate and microwave on HIGH for 20 seconds. Cool and crush.
2. Combine the papad and poha in microwave safe, flat plate and microwave on HIGH for 1 more minute.
3. In a 150 mm. (6″) microwave safe bowl, combine the oil, mustard seeds and chana dal and microwave on HIGH for 2 minutes.
4. Add the green chillies, curry leaves, turmeric powder and asafoetida and microwave on HIGH for 1 more minute.
5. Add this to the papad poha mixture. Add salt and sugar and mix well.
6. Cool completely and store in an air-tight container.

Protein poha

A combination of sprouts and poha that’s simply brimming with protein, vitamin B3 and iron.

Cooking Time : 10 mins.
Preparation Time : 10 mins.

Serves 4.

Ingredients
1½ cups jada poha (beaten rice flakes)
1½ cups mixed sprouts (moath beans, moong, red chana), boiled
½ teaspoon mustard seeds (rai)
¾ cup finely chopped onions
1 to 2 green chillies, chopped
¼ teaspoon turmeric powder (haldi)
2 teaspoons sugar
3 teaspoons lemon juice
1 tsp oil
salt to taste
For the garnish
2 tablespoons chopped coriander
Method
1. Place the poha on a sieve and wash lightly. Drain and leave aside for 10 minutes.
2. Heat the oil in a non-stick pan and add the mustard seeds. When they crackle, add the onion and green chillies and sauté till the onion turns translucent.
3. Add the mixed sprouts, turmeric powder, sugar and salt with approx. ½ cup of water and sauté for 3 to 4 minutes.
4. Add the poha and lemon juice and mix well.
5. Serve hot garnished with the chopped coriander.

Healthy poha

A breakfast that packs a mean punch! The vitamin C in lemon and sprouted matki enhances the absorption of iron from poha.

Cooking Time : 20 mins.
Preparation Time : 10 mins.

Serves 4.

Ingredients
2 cups beaten rice flakes (jada poha)
1/3 cup sprouted matki (moath beans)
½ cup chopped onions
1 green chilli, chopped
2 teaspoons lemon juice
1 tablespoon oil
salt to taste
For the garnish
2 tablespoons chopped coriander
Method
1. Wash and drain the rice flakes and keep aside.
2. Heat the oil in a kadhai. Add the chopped onions and green chilli and sauté till the onions turn translucent.
3. Add the sprouted matki and cook for a further 2 minutes.
4. Add the salt and ¼ cup of water, cover and cook on a low flame till the matki is tender.
5. Add the rice flakes, lemon juice and salt and mix well.
6. Garnish with chopped coriander and serve hot.
