Apple crisp pudding

A novel topping provides a crisp complement to apples.

Cooking Time : 25 min.
Preparation Time : 15 min.

Serves 8.

Ingredients
6 medium-sized cooking apple
100 grams brown sugar
55 grams whole wheat flour
55 grams quick-cooking rolled oats
3/4 teaspoon cinnamon powder
3/4 teaspoon nutmeg powder
3 tablespoons soft butter
Method
1. Peel and slice the apples. Mix half the sugar.
2. Grease a 200 mm. into 200 mm. square dish and spread the apples in the dish.
3. Mix the remaining ingredients and spread on top of the apples.
4. Bake in a hot oven at 200 degree C (400 degree F) until the top is golden. Serve warm.

Goodness Guide :
A delicious energy-giving sweet.
Apples and oats are low in fat but high in fibre.
Brown sugar has molasses added which return some of the nutrients removed during processing.

Bread and butter pudding

A popular favourite at Mumbai’s Irani Restaurants, a dessert of bread and milk baked with a topping of raisins and nuts.

Baking Time : 20 min.
Preparation Time : 10 min.

Serves 4 to 6.

For the pudding
4 to 6 bread slices
1 1/2 tablespoons butter
2 tablespoons cornflour
3/4 cup sugar
2 cups milk
2 tablespoons walnuts
2 tablespoons raisins
1/2 teaspoon vanilla essence
For the topping
1 tablespoon brown sugar
2 tablespoons butter
1/4 teaspoon ground nutmeg
Method
1. Remove the crust from the bread slices, spread the butter on the slices and cut each slice into 2 to 3 strips.
2. Arrange the strips in a greased 200 mm. (8′) diameter pie dish.
3. Combine the cornflour and sugar and make a paste with a little milk.
4. Boil the rest of the milk and stir in the paste after lowering the heat.
5. Add the vanilla essence and stir continuously until the sauce becomes thick and smooth. Remove and keep aside.
6. Sprinkle the raisins and walnuts on the bread and pour the sauce over it. Top with the brown sugar and knobs of butter.
7. Bake in a hot oven at 180 degree C (350 degree F) for 20 minutes.
8. Remove and sprinkle the nutmeg powder on top.
9. Serve hot.
Tips
Since the pudding is served in the same dish in which it is baked in, use a glass dish and not an aluminium baking dish.

115 grams brown sugar
55 grams plain flour (maida)
55 grams rolled oats
3/4 teaspoon cinnamon powder
3/4 teaspoon nutmeg powder
3 tablespoons soft butter
Method
1. Peel and slice the apples.
2. Grease a 200 mm. x 200 mm. (8″ x 8″) square dish and spread the apples in the dish.
3. Mix the remaining ingredients together and spread them on top of the apples.
4. Bake in a hot, oven at 400°F until the top is golden.
5. Serve warm with vanilla ice-cream.

Cabinet pudding

A simple lunch-time pudding. Serve hot.

Cooking Time : 1 hour.
Preparation Time : 15 mins.

Serves 6 to 8.

Ingredients
100 grams bread
100 grams raisins
2 eggs
3 tablespoons sugar
2 teacups milk
1/2 teaspoon vanilla essence
a pinch salt

Jam sauce or sweetened cream to serve


Method
1. Remove the crust from the slices of bread and cut into small cubes.
2. Grease a basin thickly and stick the rasins all over inside.
3. Beat the eggs, sugar and salt.
4. Add the milk and vanilla essence and beat again.
5. Put the bread cubes into the basin and pour over the milk.
6. Leave to soak for 30 minutes.
7. Cover the basin with a grease-proof paper and steam gently for 1 hour.
8. Turn out and serve with jam sauce or sweetened cream.

1 teaspoon lemon juice (optional)

Jam roll pudding

A rich dinnertime pudding.

Cooking Time : 10 mins.
Preparation Time : 15 mins.

Serves 8.

Ingredients
3 teacups mixed fruits (pineapple, peaches, cherries)

1 jam roll

1 packet (100 grams) raspberry jelly
200 grams fresh cream
4 tablespoons powdered sugar (approx.)

1 teacup custard sauce

Method
1. Cut the roll into even slices.
2. Arrange these slices on the bottom and sides of medium bowl.
3. Melt the jelly in 3 teacups of boiling water. When cold, put to set in the refrigerator.
4. When the jelly is set, chop it into small pieces.
5. Beat the cream and sugar until thick.
6. Mix the fruit, custard sauce, cream and half of jelly and fill into the bowl. Chill for 1/2 hour in the freezer compartment of a refrigerator.
7. To serve, invert on a plate and decorate with the remaining jelly and a little fruit and cream.

JAM ROLL

A sponge roll which can also be served as a dessert with whipped cream or cold custard sauce.

Cooking Time : 10 mins.
Preparation Time : 20 mins.

Serves 6 to 8.

Ingredients
2 large eggs
55 grams castor sugar
55 grams plain flour (maida)
3 tablespoons raspberry jam
a little melted butter or margarine
powdered sugar for covering the roll
Method
1. Take a 225 mm. x 350 mm. (9″ x 14″) Swiss roll tin. Apply melted butter, put greaseproof paper over it and apply melted butter once again over the paper.
2. Beat the eggs and sugar very well until thick and double in quantity. This should take 4 to 5 minutes.
3. Add the flour and mix well with a metal spoon.
4. Pour the mixture into the prepared Swiss roll tin.
5. Bake in hot oven at 450°F for 7 to 9 minutes.
6. When the roll is springy to touch, take out immediately. This is most important beacause an overbaked roll will crack whilst rolling.
7. Sprinkle a sheet of greaseproof paper lavishly with powdered sugar.
8. Invert the roll on this sheet and then peel off the paper from the top.
9. Make a roll with the help of the sugared paper. Allow it to cool for some time.
10. When the roll is cold, gently unroll and spread the jam.
11. Reroll and sprinkle with powdered sugar.
12. Cut into slices adn serve.

CUSTARD SAUCE (EGGLESS)

Cooking Time : 5 mins.
Preparation Time : 5 mins.

Makes 2 teacups.

Ingredients
2 teacups milk
4 teaspoons sugar
2 level tablespoons custard powder
1/2 teaspoon vanilla essence
Method
1. Mix the custard powder in 1/2 teacup of cold milk to a smooth paste.
2. Put the rest of the milk to boil with the sugar.
3. When the milk starts boiling, add the custard powder gradually.
4. Cook for 1 minute.
5. Cool the sauce and add the vanilla essence.
Tips
Note : Increase the quantity of custard powder to obtain thick sauce.

Hot fudge pudding

A hot chocolate cake, full of nuts and creamy sauce.

Cooking Time : 25 mins.
Preparation Time : 15 mins.

Serves 8.

Ingredients
115 grams plain flour (maida)
1 1/2 level teaspoons baking powder
2 tablespoons cocoa
160 grams powdered sugar
1/2 teacup milk
2 tablespoons melted butter or margarine
1 teacup chopped walnuts
1 teaspoon vanilla essence
160 grams brown sugar
1 tablespoon cocoa for sprinkling
salt to taste
Method
1. Sieve the flour, baking powder, cocoa and salt in a bowl.
2. Add the sugar, milk and melted butter.
3. Add the walnuts and vanilla essence.
4. Grease a 225 mm .x 225 mm. (9″ x 9″) square tin and spread the mixture evenly in the tin.
5. Sprinkle the brown sugar and cocoa over the mixture.
6. When you want to bake, pour 2 teacups of boiling water over the mixture and bake in a hot oven at 400°F for 20 minutes. During baking, the cake mixture rises on top and chocolate sauce settels at the bottom.
7. Cut into squares and spoon a little chocolate sauce on top.
8. Serve warm with vanilla ice-cream.

Quick bread and butter pudding

Cooking Time : 4 min.

Serves 2.

Ingredients
2 large fresh bread slices
2 teacups milk
10 teaspoons sugar
5 to 6 drops vanilla essence
4 teaspoons butter
For the sauce
4 tablespoons orange marmalade
5 to 6 drops lemon juice
Method
1. For the pudding
2. Grease a shallow dish with 1 teaspoon of butter.
3. Mix the milk, sugar and essence.
4. Place the bread slices in the dish, pour the sweetened milk on top and dot with the remaining butter. Microwave on HIGH for 4 minutes.
For the sauce
1. Dissolve the marmalade in the lemon juice.
How to serve
1. Pour the sauce over the bread slice and serve.

Apple and raisin pudding

Cooking Time : 3 min.

Serves 6.

Ingredients
6 large dessert apple, peeled and sliced
2 tablespoons raisins
6 to 7 tablespoons brown sugar
1 teaspoon cinnamon powder
1 teaspoon lemon juice
2 tablespoons rum or brandy (optional)
a little butter
Method
1. Soak the raisins in 2 to 3 tablespoons of rum (or water) for 1 hour.
2. Arrange the apple slices in a shallow dish and add the soaked raisins with liquid.
3. Add the sugar, cinnamon powder and lemon juice and mix. Do with a little butter.
4. Cover and microwave on HIGH for about 3 minutes.
Tips
Serve immediately.

Sponge cake for puddings

Cooking Time : 25 mins.
Preparation Time : 15 mins.

For large cake
3 large eggs
85 grams self raising flour (or plain flour can be used adding 3/4 teaspoon baking powder)
115 grams sugar
4 tablespoons melted butter or margarine
For small cake
2 large eggs
55 grams self raising flour (or plain flour can be used adding 1/2 teaspoon baking powder)
85 grams sugar
3 tablespoons melted butter or margarine
Method
1. Sieve the flour.
2. Grease and dust a baking tin. Use approx. 250 mm. x 125 mm. (10″ x 5″) or 175 mm. (7″) diameter tin for the large cake; and 225 mm x 100 mm. (9″ x 4″) or 150 mm. (6″) diameter in for the small cake.
3. Beat the eggs and sugar very well until thick and double in quantity.
4. Fold in the well-sieved flour carefully and gently with a metal spoon.
5. Fold in 2 tablespoons of hot water (1 1/2 tablespoons for the small cake) and the butter.
6. Pour the mixture into the prepared baking tin.
7. Bake in a hot oven at 400°F for 15 minutes.
8. The cake is ready when it leaves the sides of the tin and is springy to touch.
9. Take out form the oven and leave for 1 minute. Invert the tin over a rack and tap sharply to remove.
Tips
VARIATION : CHOCOLATE SPONGE CAKE
Proceed as for sponge cake for puddings but reduce the self-raising flour quantity by 15 grams and use instead 15 grams cocoa.

Queen of puddings

Jam and meringue make an excellent topping for this simple pudding, which any amateur can make.

Preparation time : 15 mins.
Cooking time : 45 mins.

Serves 6

Ingredients
55 grams fresh white bread crumbs
2 teacups milk
25 grams butter
2 large eggs
2 tablespoons sugar ( approx.)
rind of 1 lemon
3 tablespoons powdered sugar for the eggs
a few glace cherries
sultanas
a little jam for spreading
Method
1. Great the lemon rind and chop the cherries and sultanas.
2. Bring the milk and butter to boil and pour over the bread crumbs.
3. Add the sugar, grated lemon rind and the chopped cherries and sultanas.
4. Separate the eggs.
5. Beat the egg-yolks and add to the bread mixture. Put the mixture in a greased baking dish. Leave for about 30 minutes.
6. Bake in a moderate oven at 350°F until set. This will take about 30 minutes.
7. Beat the egg-whites until stiff. Beat in half the powdered sugar gradually and fold in the rest. This is a meringue mixture.
8. Spread the jam thinly over the pudding.
9. Pile the meringue mixture on top. Dredge with a little powdered sugar.
10. Bake in a moderate oven at 350°F until light brown.
11. Serve hot.
