Oats and orange rabdi

Preparation time: 15 minutes. Cooking time: 25 minutes. Serves 4.

½ cup orange segments
1 tsp sugar
¼ tsp ghee
1½ tbsp quick cooked rolled oats
2 cups low fat milk (99.7% fat-free, readily available in the market)
4 sachets sugar substitute (1gm each)
1 tbsp low fat mava (khoya), recipe below
1 tbsp skim milk powder
¼ tsp cornflour mixed with 2 tbsp low fat milk (99.7% fat-free, readily available in the market)
2 tsp orange flavoured drink mix (preferably Tang)

For the garnish
1 tbsp orange segments

1. Heat a small non-stick pan, add the orange and sugar, mix well and cook on a medium flame for 2 to 3 minutes.
2. Remove from the flame and keep aside to cool. When cool, refrigerate to chill.
3. Heat the ghee in a non-stick pan, add the oats and sauté for few seconds.
4. Add the milk, sugar substitute and mava, mix well and simmer over a low flame for 8 to 10 minutes.
5. Add the milk powder and cornflour paste, mix well and simmer for 5 to 7 minutes or till it thickens, while stirring continuously.
6. Remove from the flame and keep aside to cool. When cool, refrigerate to chill.
7. Add the orange drink mix and cooked orange segments to the chilled rabadi and mix well.
8. Serve immediately garnished with orange segments.

Low Fat Khoya (Mava)

Preparation Time: 5 minutes. Cooking Time: 15 minutes. Makes 1½ cup.

1 cup skim milk powder

1 Combine the milk powder with 6 tsp of water in a bowl and make a hard dough.
2 Wrap the dough in a thin cloth and place in a sieve
3 Place this sieve on a pan of boiling water and cover it with a lid. Let it steam for 10 minutes, then it take of the flame and keep aside.
4 Once the dough has cooled, remove the cloth and grate the dough to make the khoya.

Shahi rabdi recipe (microwave)

Thickened milk flavoured with saffron and cardamom. Making rabdi has never been so easy. The condensed milk helps to thicken the rabdi quickly, while the cottage cheese helps to add body and flavour to the rabdi. It is necessary to use unsalted paneer for this recipe as salted paneer will cause the milk to split.

Preparation Time : 5 mins.
Cooking Time : 6 mins.

Serves 4.

Ingredients

1 cup milk
1 cup paneer (cottage cheese), grated
½ cup condensed milk
¼ teaspoon cardamom (elaichi) powder
a few strands saffron
1 teaspoon ghee
a few drops rose essence

For the garnish

1 tablespoon chopped pistachios

Method

1. Mix all the ingredients together in a large microwave safe bowl and microwave on HIGH for 6 minutes.

2. Serve chilled garnished with the chopped pistachios.

Tips

Fill the microwave safe bowl to only ¼ its height, leaving enough space for the milk to rise in the microwave, without spilling over.

Instant Rabdi

This is an instant recipe that uses bread to thicken the rabdi almost instantly. It reduces the time and energy we spend labouriously stirring the milk till it thickens, it is also lower in fat content.

Preparation Time : 10 mins.
Cooking Time : 15 mins.

Serves 4.

Ingredients
2 cups milk
2 bread slices
1/4 cup condensed milk
2 tablespoons sugar
teaspoon cardamom(elaichi) powder
a few saffron strands
Method
1. Remove the crusts of the bread slices and discard. Grind the bread slices in food processor to make fresh bread crumbs. Keep aside.
2. Bring the milk to boil in a heavy bottomed pan. Add the fresh bread crumbs, condensed milk and sugar and cook on a high flame, while stirring continuously (approx. 10 minutes).
3. Remove from the fire, add the cardamom powder and saffron and mix well.
4. Refrigerate for 2 to 3 hours and serve chilled.

Basundi recipe

Basundi

A delicious dessert of thickened milk, very similar to the North Indian rabdi.

Cooking Time : 30 min.
Preparation Time : 5 min.

Serves 4.

Ingredients
1 litre full fat milk
1/2 cup sugar
1/2 teaspoon cardamom powder (elaichi)
For the garnish
slivers of pistachios and almonds
Method
1. Bring the milk to a boil in a broad bottom non-stick pan.
2. Reduce the flame and simmer till the volume is reduced to half, stirring continuously.
3. Add the sugar and simmer for some more time till the milk thickens into rabdi.
4. Add the cardamom powder.
5. Serve warm or chilled, garnished with slivers of pistachios and almonds.
Tips
VARIATIONS :
STRAWBERRY BASUNDI : Cool the rabdi completely.
Add 1/2 teaspoon of lemon juice and 1/2 cup of sliced strawberries and sugar if required. Mix well and serve chilled.
NARANGI BASUNDI :
Cool the rabdi completely and add 1/2 teaspoon of lemon juice and 1/2 cup of orange segments.
Add 1 tablespoon of orange squash if you wish. Serve chilled.

Ingredients
1 litre milk
100 grams sugar
1/4 teaspoon citric acid
2 level teaspoons cornflour
1/4 teaspoon saffron
2 tablespoons chopped green grapes
1/2 teacup orange segments
1/2 teaspoon cardamom powder
Method
1. Keep aside 3 tablespoons of milk and boil the remaining milk on a high flame. When it starts boiling, add sugar and then reduce to half the quantity.
2. Dissolve the citric acid in a little water and sprinkle over the milk so that it curdles slightly.
3. Mix the cornflour in the balance 3 tablespoons of milk and add to the mixture.
4. Warm the saffron, rub it into a little water and add to the mixture.
5. Beat the mixture with an eggbeater and cook for 1 minute.
6. Add the fruit and cardamom powder and keep in the refrigerator till required.
7. Serve cold.
Tips
Serve in a matka on a bed of ice. Sprinkle sliced almonds and pistachios.
