Orange sandesh

Tangy orange lends a special flavour to sandesh.

Preparation Time : 15 minutes.
Cooking Time : 10 minutes.

Serves 6 to 8.

Ingredients

4 to 5 tablespoons powdered sugar

500 gms paneer

1 teaspoon orange juice
2 drops orange essence (optional)
2 drops orange colour (optional)
For decoration
segments of 2 oranges
4 almonds, blanched and sliced
4 pistachios, blanched and sliced
Method
1. Knead the paneer thoroughly with the sugar. Add the orange juice, orange essence and orange colour and mix well. Spread half this mixture to form a 125 mm. square on a plate or dish. Arrange half the orange segments on top.
2. Cover with the remaining paneer mixture, spreading it evenly on top chill.
Tips
Decorate with the remaining orange segments, almonds and pistachios.

Sandesh (low calorie)

Preparation Time : 5 minutes.
Cooking Time : 5 minutes.

Serves 4.

Ingredients

2 tablespoons milk

100 gms freshly made paneer

2 grams SugaRite or 2 tablespoons powdered sugar
a few drops rose or kewra essence (optional)
silver foil or fruit pieces for decoration
Method
1. Blend all the ingredients in a mixer.
2. Spread on a serving plate and decorate with silver foil or fruits.
3. Cool.
4. Cut into decorative pieces and serve.

Health Information :
The famous Bengali Sandesh made healthier and with fewer calories using skim milk paneer.

Apple sandesh

A variation of the Bengali favourite-sandesh.

Cooking Time : 10 min.
Preparation Time : 10 min.

Serves 4.

For the apple mixture
2 grated apple
1 teaspoon lemon juice
7 teaspoons sugar
1/2 teaspoon saffron
For the sandesh

2 tablespoons powdered sugar

100 gms freshly made cottage cheese (paneer)

4 teaspoons low fat milk
a few drops rose or kewra essence (optional)
Method
1. For the apple mixture, warm the saffron and rub with a little water until it dissolves.
2. Add the lemon juice, sugar, 1 tablespoon of water and the grated apples and cook for 10 minutes.
3. For the sandesh, blend all the ingredients in a mixture and shape into 4 balls.
4. Decorate by putting the apple mixture on top of the sandesh. Serve cold.

Rose sandesh

This delicately flavoured and fragrant sandesh is a healthy way to end your meal without adding any unnecessary calories and fat.

Preparation Time : 30 mins.
Cooking Time : 10 mins.

Makes 10 pieces.

Ingredients
2 litres low fat milk
½ teaspoon citric acid (nimbu ka sar)
2 teaspoons (approx.) sugar substitute
A few drops of rose essence
A few crushed rose petals
For the garnish
A few rose petals
Method
1. Heat the milk in a vessel. When it starts boiling add citric acid. Stir continuously using a wooden spoon till it curdles completely. Remove from flame.
2. Drain the curdled milk through a fine muslin cloth and wring it to squeeze out excess water from the resultant paneer.
3. Open the cloth and mash the paneer with your palm on the cloth itself. If the paneer is hot use the edge of the cloth to rub it.
4. Remove the paneer onto the kitchen platform and rub in the sugar substitute according to taste. Add the rose essence and crushed rose petals.
5. Knead well to bind and get rid of any lumps.
6. Make 10 small round portions of the paneer, big enough to fit in the sandesh/ moulds.
7. Press the rounds on the sandesh moulds and shape accordingly.
8. Garnish with rose petals, unmould and store refrigerated.
9. Serve chilled.
Tips
If sandesh moulds are not available you can use plastic or rubber chocolate moulds or simply shape the sandesh into small rounds.

Fruit sandesh

Fruit sandesh

Sandesh is a classic Bengali sweet made with fresh paneer or chenna which is often flavoured in a variety of ways. Here I have used a fascinating combination of calcium rich low fat paneer and vitamin C rich fruits – oranges and strawberries to make an attractive festive delicacy.

Cooking Time : 5 mins.
Preparation Time : 5 mins.

Serves 4.

For the sandesh

1 cup low fat paneer

4 teaspoons sugar
2 teaspoons low fat milk powder
1 tablespoon low fat milk
For the garnish
¼ cup chopped fresh fruits ( oranges, strawberries etc.)
For the orange sauce
1/3 cup fresh orange juice
¼ teaspoon cornflour
1 teaspoon sugar
2 to 3 drops lemon juice
For the sandesh
1. Combine all the ingredients and blend to a smooth paste in a blender.
2. Spread the sandesh evenly in a 100 mm. (4″) diameter serving dish and chill for at least 30 minutes.
For the orange sauce
1. Combine all the ingredients in a pan and mix well.
2. Cook till the sugar has dissolved. Cool completely.
How to proceed
1. Garnish the sandesh with the chopped fruits.
2. Cut the sandesh into squares and serve with the orange sauce.

Lebu Sandesh

Lemon flavoured sandesh.

Cooking Time : Nil.
Preparation Time : 10 mins.

Makes 6 pieces.

Ingredients

1 recipe sandesh given at the sweets category of this blog

rind of 1 lemon
For the garnish
12 strands of saffron
8 pistachios
2 to 3 drops saffron food colour, dissolved in 1 tablespoons of water
Method
1. Grate the lemon rind and keep aside.
2. Mix together the sandesh and lemon rind and knead well till smooth.
3. Divide into 6 equal parts and shape each piece into a shell (shankh) using a shell mould.
4. Garnish with the saffron strands, pistachios and a lot of saffron food colour as shown in the picture above.
Tips
VARIATION : Pineapple or Lychee can also be used to make other flavours of sandesh.

Preparation Time : 10 mins.
Cooking Time : Nil.

Makes 15 pieces.

Ingredients
1 recipe Sandesh given at the ‘Sweets’ category of this blog
2 tablespoons pistachios, finely chopped
a few saffron strands
1/4 teaspoon cardamom powder
2 to 3 drops green food colour
For the garnishing
a few cashewnuts
Method
1. Mix all the ingredients together to form a smooth paste.
2. Roll out the sandesh between two sheets of plastic to form a rectangle of 75 mm. x 125 mm. (3″ x 5″).
3. Cut into 15 pieces of 25 mm. (1″) each.
4. Garnish each piece with a cashewnut.

Mango vanilla sandesh

Mango vanilla sandesh

Layered mango and vanilla flavoured sandesh.

Cooking Time : Nil.
Preparation Time : 10 mins.

Makes 10 pieces.

Ingredients
1 recipe sandesh given at the ‘Sweets section of this blog’
2 to 3 drops mango essence
2 to 3 drops yellow food colour
2 to 3 drops vanilla essence
a few saffron strands for garnishing
Method
1. Divide the sandesh into 2 equal parts.
2. In one part, add the mango essence and yellow food colour and mix well to make mango flavoured sandesh.
3. Line a 250 mm. x 50 mm. (10″ x 2″) cake tin with a plastic sheet and spread an even layer of mago sandesh on it.
4. Add the vanilla essence in the other portion of the sandesh and spread an even layer over the mango sandesh.
5. Refrigerate for some time and unmould and then cut it into 10 pieces.
6. Garnish with saffron strands and serve.

Pine apple sandesh

Pine apple sandesh

Sandesh rounds flavoured with chopped pineapple.

Cooking Time : Nil.
Preparation Time : 10 mins.

Makes 10.

Ingredients
Sandesh recipe given at the ‘Sweets’ category section of this blog (1 recipe sandesh)
2 pineapple slices, finely chopped
2 to 3 drops yellow food colour
For the garnish
a few saffron strands, soaked in 1 teaspoon milk
1 tablespoon pistachios slivers
Method
1. Mix together the sandesh, pineapple and yellow food colour.
2. Divide into 10 equal parts and shape each portion into a patty.
3. Garnish as shown in the above picture with saffron strands and slivered pistachios.
4. Serve chilled.
Tips
VARIATION : ROSE SANDESH
Use 3 to 4 drops of rose essence, 3 to 4 drops of rose pink food colour –
and 1 tablespoon of rose water instead of the pineapple slices and yellow food colour.
Shape into 25 mm. x 25 mm. (1″ x 1″) squares. Garnish with sieved khoya (mava) and serve chilled.

Sandesh recipe

Sandesh

Sandesh

A light creamy delicacy from West Bengal made with curdled milk.

Cooking Time : 10 mins.
Preparation Time : 5 mins.

Makes 3/4 cup.

Ingredients
1 1/4 cup chenna
1/4 cup sugar
Method
1. Add the sugar to the chenna and mix gently.
2. Cook on a very low flame in a kadhai stirring continuously with a flat wooden spoon.
3. Remove the kadhai from the flame at regular intervals so as not to overheat the sandesh. If it does over heat, it will become grainy and fat will separate.
4. The sandesh is ready when it leaves the sides of the kadhai and is neither too dry not too moist. It should have the consistency of a very soft dough.
5. The sandesh should be used immediately for making various shapes and garnishes.
