Chhanna Rabdi
Ingredients

1 litre milk |
|
100 grams sugar |
|
1/4 teaspoon citric acid
|
|
2 level teaspoons cornflour |
|
1/4 teaspoon saffron |
|
2 tablespoons chopped green grapes |
|
1/2 teacup orange segments |
|
1/2 teaspoon cardamom powder
|

Method

Keep aside 3 tablespoons of milk and boil the remaining milk on a high flame. When it starts boiling, add sugar and then reduce to half the quantity. |

Dissolve the citric acid in a little water and sprinkle over the milk so that it curdles slightly. |

Mix the cornflour in the balance 3 tablespoons of milk and add to the mixture. |

Warm the saffron, rub it into a little water and add to the mixture. |

Beat the mixture with an eggbeater and cook for 1 minute. |

Add the fruit and cardamom powder and keep in the refrigerator till required. |

Serve cold. |

Tips
|
Serve in a matka on a bed of ice. Sprinkle sliced almonds and pistachios. |
