Chhanna Rabdi

Ingredients
1 litre milk
100 grams sugar
1/4 teaspoon citric acid
2 level teaspoons cornflour
1/4 teaspoon saffron
2 tablespoons chopped green grapes
1/2 teacup orange segments
1/2 teaspoon cardamom powder
Method
1. Keep aside 3 tablespoons of milk and boil the remaining milk on a high flame. When it starts boiling, add sugar and then reduce to half the quantity.
2. Dissolve the citric acid in a little water and sprinkle over the milk so that it curdles slightly.
3. Mix the cornflour in the balance 3 tablespoons of milk and add to the mixture.
4. Warm the saffron, rub it into a little water and add to the mixture.
5. Beat the mixture with an eggbeater and cook for 1 minute.
6. Add the fruit and cardamom powder and keep in the refrigerator till required.
7. Serve cold.
Tips
Serve in a matka on a bed of ice. Sprinkle sliced almonds and pistachios.
